Edit: since the Kraft dinner geniuses here seem to be getting confused by history, the practice of cleaning bones was the result of not having this modern device known as "refrigeration" it's this RADICAL concept that I'm super all the he/her/them crowd might be confused by. It's a time when bones sat around often for hours and days in the heat and often became rancid, so yah, you boil the rancid layers, dump the water, and then do it again for the cleaner flavors underneath. ...when you have FRESH bones...throwing out the water is pointless. Cause you boil it again....and get the same substances in the water called broth...it comes from those same exact bones....so in the world of insanity where doing the same thing twice results in the same outcome, it becomes a pointless task. So the process of throwing away rancid water is traditional, this isnt. You lost all historical context and thus, modern geniuses in their arrogance and superiority assume it was for some magical flavor profile...its for rancid bones. Like cleaning carrots of dirt before cooking. Original: as a cook I'm quite traumatized that I just saw someone dumping flavorful broth down the sink just to refill it with fresh water. what the actual foook is that, you just dumped fat and flavor down the sink. there's no way that's traditional.

@@x_star6100 thats not blanching, you don't blanch bones and meat. plus you didnt really answer my original confusion about how "traditional" food involves wasting food. there is nothing traditional that involves throwing away perfectly good broth. If you want a lighter broth- that's fine but you wouldn't throw it away. Having a watery broth takes on more subtle flavors sure but no self respecting ramen chef would be throwing away broth. thats wasted calories. and if you have a question about my user name- ask a proper question in a way that makes it seem like you aren't just a cut male who gets offended that someone would take exception to har-ming healthy newborns.

The black dots on the pork belly are from the mammary gland (remember that nipple you cut off?). Sometimes they show up after you cook, sometimes they don't (it's genetic, I think). If you want to prevent that from happening again, just ask for seedless pork bellies (it's the belly with the mammary gland trimmed off. Might cost extra tho). It's safe to eat, so no worries. That all being said, that ramen looked super delicious!! I also recently discovered your channel and it's been so much fun to watch! I'm currently working through watching the past videos. They are always entertaining and I learn something new watching them :) Keep up the fantastic work!
