Saw Shizuka a while ago on Best Ever Food review show, didnt expect her to show up in my recommended list after binging a bunch of japanese food videos. All very informative, would love to set foot in that natto and shoyu shop for myself, so much stuff to take back home :)

Natto has to be one of my most favorite things to eat when in Japan, love doesn't even begin to explain how delicious it is. Store bought is good, but if you ever get the chance to try fresh fermented natto, you're in for a treat. Thank you for a very fun and informative video.

Soy Sauce in the stores is not fermented for nearly as long, many not at all. Even of quality soy sauces there is not too many that use strictly those three ingredients only and/or fermented for any extended periods of time. The best quality soy sauce is actually the little amount of runoff collected from Miso after it has aged for awhile (in fact the same Kōji Kin (mould) can be used to make either Soy Sauce, Miso or Saké but typically different types of Kōji cultures are selected depending). There is actually some alcohol added to bottled soy sauce to prevent spoilage so whatever is not used for the day, on the table, should really be stored in the refrigerator or cellar for any extended amount of time to preserve the true flavour. Thus the Kikkoman bottles half full in North American restaurants should really be thrown away if you care about taste. Tamari type soy sauce is what is used for Sashimi/Sushi in quality restaurants (it is another name but similar to Tamari style)...

I love funky western flavours, especially strong blue cheese. The strands from the Natto looks a bit “snotty” and give me a bit of a freak out expecting a difficult texture.

Actually, not very many people hates Natto. They usually like it. じつは納豆嫌いな人って少ないよね。 Japanese particular live in Kansai area tend to dislike Natto, but I like it. Though my dad hate it to guts😬
