Im elderly and havent been back to Japan in many, many decades. When i go back, I feel like I wont want burgers, pizza, fried chicken, spaghetti, etc. I want to fill up on Japanese food.

Amazed at the quality of the stuff that comes out of those vending machines... Usually the vending machines I know are good for chocolate bars, chips and soft drinks only and even those can be out of date. Even the coffee is usually terrible. So when I go to Japan, those are definitive must at least try once.

no doubt that the food is good.. but serving only the delicious part of squid?... some dishes that takes days to prepare.....hmmm... my wallet would have a conniption... but will favorite this video because i will definitely eat here when i purchase my first home and have a decent job.

I really enjoy your videos and your energy and your presentation. You are a very good storyteller. I find that you are always looking for the positive aspect of the experiences that you present and I really enjoy that a lot. That being said, I am going to have to gently disagree with you about the idea of Omakase. I have been eating sushi all over the world for the last 60 years. I began eating sushi in New York City at probably the only sushi bar New York City back in 1963 with my father, who had lived in Japan after the war. The idea of Omakase actually I think translates to the idea "I will make for you what I know you will like out of the best ingredients that I have at my access today." In other words Chef's choice BUT the chef knew you or your family and knew what you liked and disliked and would then tailor, the meal, the order and choices, to your taste,and what he had available. In current food culture Omakase has become a marketing trend to allow for a fixed menu to be presented as chefs choice. In fact, it's just a fixed menu that is based on what the chef is wanting to serve, but the truth of Sushi is that many people may not like what's being presented in the order that it's being presented? It's not a question of differentiating between ordering ala carte or Omakase. The origins of Omakase have to do with a relationship between the chef and his customers and I find it very difficult to want to have Omakase with a chef who doesn't know me very well and especially at the high price points that that kind of service is asking these days. I think the meal you had was quite beautiful and looked delicious and the way you present it was wonderful, but I would love it if somebody would actually talk about the idea of a relationship being cultivated between a sushi chef and his clients and the meals that are created from that relationship rather than presenting fixed menu restaurants as being haute cuisine, and a new way of presenting Sushi. I don't know if it's just me, but I feel like we are hearing Shizuka speak more in Japanese. I think before it would sometimes be edited and we would simply hear the explanation by Shizuka. If I am right, I would say I really like this change because I love to hear the direct interaction.

The last sushimaster i saw said that Omakase is stupid because the Chef is working for the guest and how is he supposed to know what the guest likes. Omakase has become Osusume without the decision process of actually choosing the recommendation. It is like namabiru.
