This looks like a move that turns on very fast. If I'm practicing with a friend, and they are bucking and moving around, how do I make sure I don't accidently hurt them?

Submissions are like dimmer switches. Make sure you gradually turn them on and you have a partner that is compliant and who doesn't make any sudden movements. And as an extra point train with a skilled coach that can help guide you in a safe environment. :)
