Great video! Your website shows that the standard mattress has 3" of memory foam, but Nectar's website says it has 1" of memory foam and 3" of support foam. Did the mattresses change?

This comparison is unfortunately based on the old model. It was published last year. We have tested the newest Nectar lineup, but we still need to update this comparison and this video. We're working on those updates now, but it's going to be a while longer before they go live.

What about for a heavier person? I'm 6'3 275 and am concerned about the nectar original just purchased

At your size, I am concerned you'll find the Nectar Original unsupportive. Mostly due to the relatively thin 11" profile. Heavier bodies generally need thicker mattresses to create more robust support.
