To keep from dying to the throwing in the door you can either carry throwing knives open the door or peek it, what happens when you have throwing knives in your inventory is when the one in the door drops you'll just pick it up instead of it killing you

I don't think that first one counts as a "true" mid-air catch, because the grenade bounced on the players first. You should try and see if you can catch it from the side as it flies past you.
