The main point of pani puri is that it's cheap and delicious at the same time. So paying like 500 bucks or 150 bucks for Pan puri is really unconventional to the pani puri itself.

Yes but even the owners know that this pani puri is not aimed to be served for every person. It's not unconventional but it's just modified. Because in a way, eve dosa is supposed to be a cheap 20-30 rupees snack, but everywhere today, you get paneer dosa, manchurian dosa etc which are like 200 bucks. It just means there is innovation
