Best fish soup I ever had was from a little cafe in Paris. It was just consumme, probably made with vegetables and fish parts, then strained into a bowl. Delicious. This looks wonderful too, but to me, it’s closing in on stew territory.

Thanks! I'd just use clam juice instead of the water. Maybe toast the shrimp shells (removed from the flesh) in the pan before melting the butter, etc. But that might take longer than 30 minutes ...

Hello! Thanks for watching! Heavy cream and dill are both optional. Heavy cream gives it a creamier texture. You can substitute dill with any garnish of your choice (green onion, parsley, etc.)

Unfortunately this is not a fish soup!..It's a vegetable soup with some pieces of fish in it! A fish soup has to be cooked with fish stok!..Only then it is curing and delicious!
