It doesn't always know the best moves. Chess is not a solved game, so we don't technically know the best moves. Stockfish, in general, just has the best moves we know of, and far better than any human can calculate. Nevertheless, other engines, like LelaChess Zero can sometimes detect advantages in positions better than even Stockfish.

Why do we skip over black's reason for the knight sac at 2:00 i.e. where black wins if it's accepted (see the eval bar drop before black makes the wrong next move for some reason)
