My tastes changed over time with Yu Kurosaki's stuff. I used to want to wait until I can get the AO Fujin lineup, but it could be awhile, if ever, for it to be available again. It all depends on our very own god of the wind, Kurosaki-san, I suppose. But my point is that I used to only want the Fujin AO line, but scoff at the other lines. The more I grow and experience new things in the industry the more I realize that Yu Kurosaki really has a line for every kind of chef. I used to look at the Gekko line and visibly cringe at the drop spine. But after having done a carving action station for banquets, and having done fish butchery, I've realized that my gyuto could be subbed out for a Suji or a thinner gyuto. With the drop spine, you can have a taller blade height for veg while still having a relatively short blade that can slice through meat easily for its blade height. So with that line, you can have your cake and eat it. I'm just appreciative for Kurosaki-san in general. It's also coinciding with discovering my love for powdered stainless steels. I also used to be the carbon steel guy. But after this summer we've recently had, I realized just how much time I've wasted in my station at work babying after my knives. So my takeaway is: just buy all the knives. All of them. You can't go wrong, guy.

I've seen that one too and made a mental note for it. Great choice. Beautiful Knife. That piece makes My top three list and could be a number one ... if not for two others. I applaud that choice to complete a knife-roll ... 👍

What makes this new VG XEOS better than VG-10? I know VG-10 is popular, especially among mass producers of knives. It also seems to be tolerated as opposed to loved by the knife community. If there haven't been major improvements, seems a little odd for Kurosaki-san to be switching to the new VG alloy. Up front, it makes the Gekko line less appealing.
