I was just watching this primarily for background noise. I'm already pretty good with a knife. I do the exact same thing when it comes to julienning an onion as you and not really knowing why to flip it halfway other than having seen it in tutorials and finding it worked better in practice. I always tried to think critically why it's better and never could. "Always go uphill" explained it perfectly, and I've never heard anyone else spell it out that way and just wanted to give you a pat on the back for that one.

So this is actually what they use in medical facilities as well. When they put a cast on someone they just have a very dull piece of circular metal that doesnt harm the skin, but vibrates at a frequency where the cast gets sawed off. Same logic applies here except the knife is sharp

I only put my knives on the stone if they are incredibly dull. I have a fallkniven DC 4 and use that to sharpen my knives, then hit them with a strop. Gets them shaving sharp every time.
