Great question! With our current tools available, there is no way to view tasks from the Church Center or People app. This is on our radar for consideration down the road.

What's the benefit of doing this as a task vs a workflow?

This is a great question! It really boils down to what you are working on. Tasks = to create, track, and organize to-do items while Workflows = help leaders track progress and communication as people go through specific steps or milestones.
