As someone that has spent 30 years in the restaurant industry I have never been a fan of the "annual gimmicky pans". I prefer All-Clad professional cookware. However, my sister bought me the two pan set for Christmas and I'll be honest... I wasn't in any hurry to use them. In fact they hung on my pot rack for 3 months before I used them and.... well i was impressed. If cooked well, had a good sear on the meat and then it cleaned up so easily... Ok, so now I will actually use it more than my other pans... It is actually very good...

Loved the original. My partner burned it on high heat then used strong abrasive and that finished the non stick in the areas where it burned. I went back to bed, bath, and beyond, but they stopped carrying it and only had a smaller one. I found the old size at Home Depot online at a great price and ordered two. THEY ARE GREAT. After watching your first review for Granitestone pan, I got mine in December and L❤VE it! Even cooking a pork tenderloin in the oven worked well. You can take cast iron and stainless to well past 400F and expose the cooking surface to flame without issues. High temperatures and open flame will degrade non-stick surfaces.

A shout out to Zach for being so prompt with his reply and quick attention to correcting my email mistake. There was a plastic potatoe bag in the can and, wouldn't you know it! The bag glomped on to the pan! Here's the freakin' part, with just a little elbow grease and a plastic ruler edge, all the plastic came off! (I am arthritic, so my elbow is not very greasy, either.) You should compare that new Granitestone Pro with the Ballarini Bologna pan, which is another pan coated in 'Granitium' and also has Thermopoint, a colour-changing spot on the pan's handle that tells you when it's pre-heated (and also cooled down for washing). I'd love to know the performance vs this new pan and also if the 'Thermopoint' is just a gimmick! The pans seem to be similar price online..

The Ballarini pans I've seen are double the price of the granitestone. $60 for one pan plus shipping not 2 and free shipping plus there are discount codes from the company and James. @@kennethcraig8656 That makes sense as I am in Canada and can't find a Canadian link for the GraniteStone Pro, but the GranitStone 12" is $43 CAD and the Ballarini Bologna 9.5" can be bought for $45 CAD on Amazon, or about $33 USD so I thought it was a good comparison. Type Pan with this configuration stone coating came out in the nineties one key feature is that it's not flat it's a porous surface it's got peaks and valleys so the food is actually cooking on top of the peaks therefore you have air getting in between these valleys and there's virtually no way for it to stick that's what makes it a very very good Pan

One thing I didn't see you address is how quickly the pan heats up. For a quick breakfast of eggs, if the added thickness of the induction compatible base requires an extra 3 minutes to start cooking, that's probably going to favor the older version. I'm with psibeast. More info please. To me one of the most important qualities of a pan is it heavy and thick enough to spread heat evenly and NOT WARP. Not warping is as important to me as non-stick and non-stick longevity. The first granite stone pans were cheap and thin and I had no expectation that they would not warp. They did, and rather quickly. By fairly convinced they do have a better surface, but does that now come with the other qualities that make a very high quality pan.

I got the big pan and the egg pan at the same time. Neither of them could handle an egg pan without something sticking. You are supposed to oil it before first use, but that is implied when they said it was non-stick...

I've been looking for a durable nonstick fry pan for everyday use and I'm going to give the Granite Stone set a try. Thanks James !

What temperature water are you using? Generally speaking, cold water works better on proteins.

I’ve been waiting for this review I wanted to see how well the new pen worked compared to the old I wish you would’ve made some steaks and pork chops to see how it did with that and with seasonings on it love the video

I got my granitestone diamond pan because of your original video and I'm glad to see a new version.

I don't know if they are against using acids to help clean them, but soaking in lemon juice or vinegar will help lift the stuck food. another option is to boil water in the pan.

I have a set of the Granitestone Diamond Pro cookware. I don't think anyone has mentioned the lids. They're impossible to clean when food gets under the edges. The edges should be sealed off, but I cooked some barley with the lid on and the foam with some of the debris got under the edges, and there is no way to clean it out. There is just enough for stuff to get in but can't be cleaned out. Seems very uinsanitary.

I really like your reviews. I have come back a 2nd time for this one. I am highly considering buying the whole set with baking pans...what do you think?

My biggest concern is how long with the non-stick property last.
