Great video! When I make big batches of meatballs, I like to stir all the add-ins (eggs, bread crumbs, milk, onions, & seasonings) together first. Then mix in the meat. I find it mixes more evenly and quickly that way.

I’m a single gal with no kids, I eat an all meat diet for health reasons, but this channel has been so awesome! I love how you prep your meals so you can spend more time with your family and less time in the kitchen. You have such a vast collection of recipes, such variety, and you’re so fun. It brings back fond memories of being a kid and my mom making meals for my sisters and I, and dad. I wanted to share a recipe that I love to make for prep day using shredded chicken: Baked Creamy Chicken Taquitos Original Recipe by Our Best Bites Ingredients 1/3 cup (3 oz) cream cheese (low fat is fine, avoid fat free) 1/4 cup green salsa 1 tablespoon fresh lime juice 1/2 teaspoon cumin 1 teaspoon chili powder 1/2 teaspoon onion powder 1/4 teaspoon granulated garlic, or garlic powder 3 Tablespoon chopped cilantro 2 Tablespoon sliced green onions 2 C shredded cooked chicken (for extra yumminess, use grilled taco chicken!) 1 C grated pepperjack or plain jack cheese small flour or corn tortillas kosher salt cooking spray or olive oil Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well. You can prepare up to this step ahead of time. Just keep the mixture in the fridge. If using corn tortillas, work with a few tortillas at a time and heat in the microwave, wrapped in damp paper towels until they are soft enough to roll without cracking. Usually 20-30 seconds will do it. If using flour tortillas straight from the fridge, it helps to warm them in the microwave so they’re easier to roll. Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1 inch from the edges. Roll up tortillas and place seam down on a baking sheet, not touching one another. Spray lightly with cooking spray, or lightly brush with olive oil and sprinkle lightly with kosher salt. Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown. Remove from oven and let cool slightly before serving. Dip in sour cream, or our favorite: Creamy Lime-Cilantro Ranch. Freezer Instructions: Prepare the taquitos through rolling them out and placing them on the baking sheet. Place the baking sheet in the freezer and freeze until solid, then transfer to a large freezer bag. When ready to cook, preheat oven to 425 and place the taquitos on a lined baking sheet. Bake for 20-25 minutes or until golden brown and crispy. Yields 12-16, when using 6″ tortillas, depending on how full you make them.

For the onion eye burning, if you put out a small dish of white vinegar on the counter and let the water in the sink run, just a slight stream, the oils from the onion will "attack" those instead of your eyes.

Amazing!! Tip: fold the tops of the zipper bags down like a cuff when putting in stuff like the beans. Keeps the zippers clean and helps keep the bags open and standing. I make a big batch of pizza or other pasta sauces and divi up into smaller portion bags and freeze. That helps when I need a fast meal. Easy to defrost in a warm pot of water in the bag too. Tfs!

I always rinse and sort through my beans, I’ve found rocks and clumps of dirt in my beans, other times I’ve found nothing but the beans! I remember doing hours of cooking and prepping, not so much anymore! I love watching you cooking for your family!

Amy when you scoop the meat or anything that you are wanting to be round continue to squeeze the handle repeatedly and it will make a perfect ball. Makes perfect hush puppys also. It goes quickly and with less mess.

Cook roast in your instant pot with taco seasoning you can make tostadas burritos tacos or even nachos and you don't have to slice it...just shred at end...I do this then freeze for small meals ...Lillie

Cool tip: take a plastic large yogurt container ( or any plastic container,) cut off the bottom and cut one side ,now you have a bag holder that will fit any bag , rinse n save 👍

That why you have to always wash both rice and beans as at times there is gravel in them, plus always better to be sure it’s all washed before use. I always wash rice and beans few times before soaking them then cooking them. Soaking the rice makes if fluffier and whiter and for beans it lessens cooking time :) take care and God bless you and your family always.

For the thinly sliced roast, salt & pepper, spread a super thin layer of mustard on each piece, top with chopped raw bacon and diced onion, roll them and secure them with a toothpick, or tie with string. Brown each roulada in a little oil on all sides, put in a baking dish (or Dutch oven) and add a bit of water - you want it to cover the bottom of the pan. Cover tightly with foil and bake at 250° for about 2 hours. You can thicken the broth to make a gravy. It is AMAZING with mashed or roasted potatoes!

When I worked at a hotel we made lamb meatballs 2x a week in large batches. It’s very tedious. What I learned was that if you scoop all the meat first onto the tray then mold them it goes by way faster. This way you don’t have to put the scoop down. Saves a lot of time and it doesn’t seem like you’re swimming in meat 👍🏻

I made homemade bread at the beginning of the week and it's getting stale now. I chopped up the bits and added some drained frozen spinach, bits of shredded mozzerella and swiss cheese and a bunch of eggs and milk. Mixed it all up and let the milk soak in and baked it. Delish savory bread pudding. You can put in anything with the eggs and old bread..ham, bacon, or sausage work great for a breakfast casserole. I also chop up old bread and just toss it in a big skillet with some oil and italian seasoning and salt and pepper..BEST croutons ever for salad. Or can chop it up to save for stuffing mix and you can cook it in a big pan and just lay pork chops or chicken or fish over it to bake or just bake it on its own as a side. You don't have to wait til you have a turkey (and I don't think you like those lol). So many great uses for stale bread for things that are EXPENSIVE to buy.

Hi, Amy. A little tip: an 8-count box of disposable gloves cost about $1 at Walmart. They're comfortable, sanitary and you lose little of the tactile function. Easy solution to mixing and shaping meatballs by hand. Thanks for sharing your food prep. It's always enjoyable. I've noticed a change in your video shot setups that provides more angles of view. Wow, that was a pretty big rock in those beans! I always put my dried beans on a rimmed sheet pan and check for stones before I rinse them off. I've found a few over the years! It's not worth skipping that step, a broken tooth is nothing to laugh about!

Tip: meatball or Meatloaf mix try this, add beef broth instead of milk. I used milk in the recipe for years until I was low on milk. I had some leftover beef stock to use up. Tried it and love the yummy taste!

Pat the meat flat in your pan. Refrigeratorate a bit to firmm up. Cut in squares. Saves all that patty making.

Just a helpful hint. #1 If don't want to take out your processor. Ziplock bag & rolling pin. I use when using peppercorns. Place then in a Ziplock. Seal removing as much as you can. & get out aggression with the rolling pin crushing them up. Works great too for cracker crumbs. #2 if their is a butcher available where your purchasing the meat & need it sliced thin, ask. I have & it was perfect. Let him know i was VERY great full. #3 Pork chops. My sis & family that live in NY (5 total) love pork chops. Often a pork loin is cheaper. Again ask then butcher to slice it into chops. They generally will. She got like 30+ chops this way for nearly 2 x amount as she would have for a pack of 6 chops but got a bunch more. Her hubby was shocked at how many for not a lot more $.

Check out how to remove phytonutrients from beans and rice. Sort, rinse and soak with apple cider vinegar or lemon juice diluted in water. Rinse again before cooking.

As I've mentioned I am an mid, 50s divorced empty nester with physical disabilities ....videos like this I will watch a couple times, take note, get ideas from and implement into my life to help me sustain my independence . Most days are a struggle and my options are limited for what I am physically able to accomplish ..simple tasks like bathing, cooking, eating, are always on top of the list which tired me greatly ....so these prep ideas are extremely useful they help me mange my time or my " spoons" as we call them in the Lupus community. The Spoon Theory by Christine Miserandino is a fantastic read btw. I encourage other women in my group to follow you and Amy...you help so many in my Lupus community with videos like these...thank you for everything you do.

Make stew cubes. Or, make roast using a Ropa Vieja recipe. Ropa Vieja means "ragged/old tattered clothes"...in this recipe makes shredded (tattered rags/ ropes of meat) meat...oh so yummy - serve over rice or make sandwiches. Just a thought or two.

Try taking the beef roast and make Italian beef Sandwiches. I place in my crockpot with a Italian Dressing Packet, an Au Jus Packet, 1/2 cup of banana peppers with about 1/4 cup of the juices. Then a stick of butter. Cook on low 6 to 8 hours. Then shred. Serve on Sandwiches with Mozzarella or Provolone cheese. Over mashed potatoes, over cooked noodles, over rice. So many ways to serve them. They have great flavor and are shredded so the kids eat it better.

Put your seasoned roast in the crockpot with a little water, and slow cook all day. Once cool enough, shred. We use it for soup, shredded beef sammies, beef and noodles, and anything that calls for beef chunks or strips. I do this with chicken as well. Saves a ton of time.

Hi Amy! Loved today! Your certainly ready for the big cook tomorrow, lots of prep work done to save you time. Interested as I said yesterday in seeing the new recipes next week, might well give me some ideas for our meals. I made a version of a chicken chow mien tonight. Didn’t have noodles so used spaghetti and made courgette noodles with the machine I have, Great way to cut down on some carbs and add veg to the dish. My hubby wasn’t keen ion the courgette so I made him some carrot noodles with his spaghetti. Hadn’t had anything like that in a very long time since I’m allergic to wheat and soya, used to love Chinese takeout..... I know others have already told you that onion is toxic and bad for cats and dogs but so is garlic, it may be worth while looking up things that cats and dogs should not be eating. You would be surprised at some of them and how instant some of the reactions can be, I’d hate for anything to happen to any of the animals, as I’m sure you would due to not knowing..... thank you again for this wonderful video, I’m sure you run on energiser batteries 😂 I’m tired just watch8ng you 😂 big hugs!

I ALWAYS sort my beans. Even if I buy the triple washed. I’ve found gravel and dirt cubes in them. Rinsing it it not enough. A good way to know if they should have been washed is if you see that a foam layer had formed while cooking. If it did, I’d throw them out.

Love love love your videos. Try cooking your beans with salt and a couple garlic cloves. This makes them so tasty. Once they are fully cooked it’s hard to integrate the salt into them.

Making uniform meatballs ... a friend of mine that had had a stroke would press all her meat mixture in a sheet pan, and cut it with a pizza cutter into however big she wanted the meatballs to be. The process goes quickly and are pretty much the same size.

Amy hi , I use my stale bread 🥖 for bread crumbs . My tip is when making them add your seasonings to your food processor with your bread when chopping it up . I let my bread dry out first then I chop it really fine makes it so much easer . I do some plane then I do some seasoned . Then there ready to go and the seasoning has time to get enhanced into the bread the longer they sit . But what your doing sounds great 👍. It’s just a time saver I feel if there all ready seasoned . Just a thought for you , Sharon ☺️

I love using beef roasts on the crockpot. Our favorites are roast, cream of mushrooms and onion soup mix or roast with ranch seasoning, onion soup mix and butter (with pepperocini peppers). They come out extremely tender and delicious! Also great for open faced sandwiches.

Do you soak your strawberries in Salt water to draw out the worms that are in them? I never knew that they had worms in them until I saw a you tube video last spring. You soak in about 1 Tbsp of salt and the little worms come right out. You can watch a youtube video to see what you are looking for. I thought it wa as a hoax until I did it myself. Sure enough I found the little worms. I love watching you prep for freezer cooking. You get so much done.

My husband's family marinated things in soy sauce, non-creamy Caesar salad dressing, and a little lemon juice. Steak, chicken, nearly everything works in it.
