Another issue is new orleans legacy cooks have retired or have passed away. These new restaurants are the younger generation. I've noticed the younger cooks are not consistent or change the traditional recipe. I love deannies minus all those French frys. Vazquez near the lakefront was good and consistent. Gotta visit the long lasting restaurants.
@aubreysinclair848010 ай бұрын
Alex, Po-boys come in two ways. First, traditional: Buttered bread and pickles. Second: Dressed, Mayo, lettuce, tomato and pickles. No sauce! Remoulade is a new concept to add to a Po boy. Also, traditional bread is French bread, not a baguette. I am a Creole, from New Orleans, living in Los Angeles. If you want to learn more about the cuisine and culture, let me know.

I've never in my life had a dry PoBoy 😅😅 I've also never known anyone to get a shrimp PoBoy from Mother's. Only roast beef but that's a tourist trap. We don't eat there 😅😅 Real PoBoys are at Triangle, Parkway, Castnet, Hanks Seafood, Adam's Street Grocery. Basically, the hood. The people who created it. They're much bigger and juicier for less money. BUT if you go to the other places, you're supposed to ask for it "dressed" mayo etc. NOT sauce and shrimp PoBoys are either Mayo, lettuce and tomato only or Mayo, KETCHUP, Hot sauce, lettuce and tomatoes. Some places are known for their Shrimp PoBoys but some are better known for their HOT roast beef PoBoys or their HOT SAUSAGE WITH CHEESE PoBoys. You only go to the specific place for the specific thing. For example, Neyows = Chargrilled oysters. We wouldn't go there for gumbo 😅😅😅
