New Orleans style Crawfish Enchiladas

New Orleans native Charlie Andrews demonstrates how to make Crawfish enchiladas. Enchiladas are a Mexican dish. It consists of homemade tortillas wrapped around a cheesy crawfish filling and topped with a homemade chili sauce and 2 different types of cheeses and baked in the oven. This recipe makes 4 large enchiladas. It has a wonderful crawfish flavor, cheesy and absolutely delicious. Hope you all will give this recipe a try.

They look amazing. I love the flavor corn tortillas add to a dish. You should try making red sauce by boiling the dried red chili 🌶 🌶. Hatch green chili are the best for green enchiladas. Mexican and Cajun are my favorites.

I make cheddar jalapeño tortillas. My own enchilada sauce. My on Cajun/Creole seasoning. I grow my own bell peppers & jalapeño peppers. A friend farms crawfish so mine are never frozen. You should add some enchilada sauce to the inside of the tortillas also. Invest in a few pastry brushes. Oh, I also make my own cheese. It’s easy.
