Because many fighting games even in current year suffer from a phenomenon called stage lag. Certain stages have elements in them which cause performance issues, resulting in frame drops and increased input latency. In a competitive setting, this is absolutely unacceptable since in a real match, every frame and every decision you make matters. One bad input could cost you the whole match. ArcSys games are notorious for having beautiful stages, but with major performance issues on the vast majority of them on both console and PC, no matter the specs of your machine if you play on PC. This is why you see everybody pick the Assassins' Cave/Council of Three stage in Strive, or as an earlier example in BlazBlue, why everybody plays on either Colosseum, Rachel Stage (Halloween/Requiem), or Mu-12/Unlimited Hazama Stage (Aventus/Altar). In the early days before rollback, this was also the reason why there was an unspoken "golden rule" in old ArcSys game netplay where you HAD to let the match intros play out, because stage lag could cause input desyncs between players and even more lag.
