Maria, I’m one of your senior citizen viewers and I truly appreciate the way you explain and share. I feel like you’re showing some folks who might not know much about cooking how to actually do it. I’ve cooked for more than 55 years and I’m always happy to learn something new. With rice I don’t rinse it although I look it over the same way I do beans. I don’t want it wet because I always fry it in the fat for a couple of minutes before I add the liquid.

I get a large jar of chopped garlic from the Dollar tree, now $1.25 It is handy and it is a lot of garlic for the cost. Also we had no onions in my area for a few months. I bought dry minced onion for .98 at Walmart. I put what I needed in boiling water a couple minutes and then sauteed as usual. As a senior, having a huge bag of onions sometimes a few get away from me.
@yvonnepalmquist86762 жыл бұрын
I do the same. I hate that produce gets away from me. I've recently even purchased dehydrated bell peppers and celery, as well. A bigger up front cost, but my guilt for waste has been eliminated. My pantry cooking has improved greatly.

Rinsing or washing rice removes that excess starch, resulting in grains that are more separate when cooked. (There’s the added benefit that rinsing rice before cooking can reduce the level of arsenic, but FDA research shows that the impact is minimal on the cooked grain.) When it comes to rice dishes that call for the grains to stick together more, such as rice pudding or risotto made with arborio rice, the advice is split. According to America’s Test Kitchen editor in chief Dan Souza, “You want to avoid [rinsing] if you’re making something like risotto or rice pudding. We found that rinsing compromises that desirable creamy consistency.”

Note on the onion soup rice: try the recipe with 1 cup of white rice; 1 can French Onion soup; one can of Beef Consomme’; 1 8 oz. Can of sliced mushrooms undrained; and 4 tablespoons of butter (yes, the original recipe I was given 45 years ago also called for 1 whole stick of butter - I thought that was too much, but it’s definitely buttery!). Mix it all up in a casserole dish with a lid and bake for 45 @ 350 degrees. You can take off the lid and bake for a few more minutes to remove a little moisture. My recipe is titled “Brown Rice” simple because of the color when it comes out of the oven. However, I’m trying your recipe because it’s hotter that h-e-double-hockey-sticks in Florida right now, and I don’t always like firing up the oven! 🥵

Rice milk!!!! Plain or horchata style. Is it as good as whole milk and Cinnamon Toast Crunch, nope… but in smoothies, it’s pretty good. There are a ton of recipes online. For a change in texture, take warm cooked rice(you can mash half in the blender), beat in an egg, make a patty and fry on the stove top. Crispy on the outside, fluffy in the middle. Can be savory or sweet depending on how you flavored your rice.

The garlic rice is basically a quick or poor man’s risotto. Don’t rinse your rice for this one. Risotto would use stock, but probably have onion and parmigiano and the starch from the rice cooking little by little with the stick makes it creamier. This is a good alternative if you don’t have time or all the ingredients for risotto.
