55 year old part Italian here. Been cooking pasta since I was a kid. Taught by my parents and grandparents. You are doing great, Atlanta. Please here my tip: Never rinse pasta after cooking it when making any kind of hot dish. What you are doing is removing all the necessary starches from the pasta. This prevents any kind of sauce/cheese adhere to the pasta. It also alters the taste to a dull, almost stale flavor. So remember, Always drain, but never rinse your pasta when making a hot dish. 👍

agree, I never rinse my pasta when making a hot dish, only when making something like a pasta salad or a macaroni salad. Something about the starch left on the pasta helps the hot sauces adhere to the pasta better. But the instructions might have told her to rinse.

My sister did that to me as a kid when I was trying to sleep since I had to wake up extremely early for school 😂 I thought they were putting stuff in my nose (I was half asleep) Was pretty angry and when I eventually woke up I saw the mustache 😂

I love Atlanta's Kitchen but I've lived in Washington for 67 years and I've never heard of Beecher's Mac and Cheese. If I had to pick a state food for us, I'd pick salmon or some other kind of fresh seafood or maybe apple pie.

My husband and I said the same thing! If it's WA, it's gotta be either salmon or apples to really represent us! But now I'll have to find this, I guess...I'm 46 and have never heard of it!

Being a lifelong Washingtonian myself, I do find this to be unusual as far as associating it with our state. Personally, I would have selected apple pie since Washington State is well-known for its apples. Nonetheless, this sounds YUMMY!!!

From Washington State, looks great 👍 However I have never had or heard of Beecher's Mac & cheese. Washington State is more known for apples, Salmon, crab, muscles, and Teriyaki. I am truly stumped by the mac & cheese. Looks yummy though, so I am not disappointed.

I'm from Washington as well and was really shocked it wasn't apples, cherries, salmon, oysters or one of the foods we are known for. I am curious who the source is that says Beecher's is our state food? It's not something I would make for out of town guests to give them a taste of Washington State, but that's just me. Anyway, it looks good and I love the show!

Nicely done! You guys will love Washington! Mountains, ocean, desert and amazing scenery. The food grown and harvested here is amazing! Beside Beecher's we have salmon, crab, oyster and clams. We grow the best apples in the world in addition to peaches, cherries, berries and vegetables. Thanks to Atlanta for making the mac and cheese. This girl is going places!

I was so excited to see this video today, Atlanta! I've lived in Washington for most of my life, growing up on the west side north of Seattle, and moving to the east side near Spokane in my twenties! The two halves of Washington are extremely different from one another due to the mountains that divide it into two very different climates. I was expecting you to cook something with apples or salmon, as those are two of our most famous "homegrown" food resources, along with Walla Walla onions. I was surprised at the choice of mac and cheese, and I'd never heard of Beechers, but reading the comments I see that its regional to Seattle and has only been around for about twenty years, so that makes sense. I'll have to try it someday! Anyway it doesn't matter WHAT you cook, it's just always a delight to see your cooking videos. My daughters are 15 and my son is 12, and they also enjoy cooking but aren't as adventurous at trying so many new recipes as you are! Love you and your family and hope you have a very Merry Christmas!

The trees are primarily Douglas Firs if I remember right. Check with Agent Cooper or his assistant Diane. And if you want to try a variation, get another of those kits or make your own using Sharp Cheddar or some other type of acceptable cheese and add bacon that you've fried or baked to a crisp. I am a big fan of "Cracker Barrel White Cheddar Mac 'n Cheese" which although branded with the name of a restaurant is available in stores here. While the noodles are boiling I put about 16 strips of precooked bacon on a plate and microwave them covered for a minute or more to get them to the state I like them to be in. When they are good and brown with maybe a little black and are really shriveled, I blot away the grease and when the mac and cheese are in the bowl and mixed thoroughly, I put the bacon on top and the strips break up as I mix them in. GOOD STUFF!!!!! Denzel... STOP THAT!!!!!

Suggestion: You can reuse the recipe but use local NZ cheeses. I'd be curious to see the difference.

I live in Sammamish Washington which is a suburb of Seattle. (About 20 miles East) Beecher’s Cheese makes some really amazing cheeses! It’s a lot of fun going to the store in Pike Place Market. Pike Place Market is over 100 years old and is an eclectic farmer’s market with hundreds of shops, meat, fish, produce and many many handmade items, antiques, junk, and just about anything you might want. Well worth a visit!

I lived in SnoCo (Lynnwood and then Everett) before moving the other year to the eastern side. I thought it would be nice getting away from the drizzle and clouds but it all dust and wind over here. I miss taking new visitors to the Market and treating myself some fresh colorful bouquets.

Don't rinse your pasta! Also, a nice touch before baking is toast breadcrumbs in butter in skillet or saucepan. Sprinkle over pasta. Place in oven and bake according to recipe. I like to whisk an egg into the cheese mixture before adding pasta. There are so many variations of this recipe and so many cheese choices.

I have been cooking well over 50 years. People always say to NOT rinse pasta. I find if I don't rinse it, it sticks together and can continue cooking if left hot. Just speaking from MY experience.

@@gregoryblair9810That’s kind of the point of why you should never rinse the cooked pasta. The cooked pasta develops a starchy outer surface. That is what is making it sticky. You want that starch to both help thicken your sauce and to bind the sauce to the pasta. If your pasta is sticking together and ending up overcooked, then you are likely overcooking it badly. You should have your sauce ready to go at least a couple of minutes before the pasta is ready. The pasta is ready a minute or two before it is cooked to the texture that you want it to end up with. Then you need to move the not-quite-cooked pasta into your sauce. Don’t fully drain the pasta, but rather use tongs, a pasta fork or a slotted spoon to move still dripping wet pasta into your sauce. Your sauce should be hot and on at least low heat - dairy-based sauces need to be treated gently, but most other sauces will appreciate more heat. Stir the pasta into the sauce as the pasta completes cooking in the sauce and releases more starch, thickening it. You may want to add a small amount of the starchy water from the pasta cooking pot into the sauce and pasta in order to achieve the correct consistency - another reason why you shouldn’t drain your pasta and throw away that valuable pasta water. Follow this basic, simple technique and you will achieve far better results than dumping sauce on top of pasta that has been fully cooked separately, then drained and rinsed.

I’m born and live in Washington state. I’ve never heard of this before. Mac and cheese is a relatively common meal , but the popular favorite is a box of Annie’s homegrown. Beechers seems to be a gourmet specialty to pikes place market, but it isn’t wide spread across the state. When I think Washington foods I think apples, wheat, salmon, onions. Other fruits grown throughout Washington include peaches, pears, apricots, blueberries and raspberries and wine grapes. When In season, many locals enjoy foraging for wild huckleberries and mushroom hunting. In coastal parts of Washington, digging for clams and fishing are also hobbies enjoyed by some locals.

Atlanta doing so good with these Kitchen episodes and I know you try and stick with the recipe's most used in each state. However when ya'll are just at home and want some baked Mac' n Cheese I would add some bread crumbs to the top of it for like last 10 or 15 minutes for texture and extra flavor! Stay blessed ya'll!

I was born and raised in Washington state. I, too, have never heard of Beecher's mac and cheese. But Fish and Chips (french fries) are a favorite, and seafood, in general. As far as the trees go, they are gorgeous and are my favorite part of living here. I love your channel!

Yes Washington State is pin trees and hard wood trees maple madrona others. I actually don't know if I have ate this actual one but my husband grew up up there and I lived there for like 15 years before I convinced him to move to Oregon my home state. But it looked good my have to try it.

Aw, I live in WA state! So glad you guys got to try this. I've been to the Beecher's factory down at the Market (Pike Place Market in Seattle on the waterfront) and watched them make the cheese. It's DELISH! They also do a frozen lasagna... Though I like to make my own, I totally love theirs! Also, I love your name! Lived in Atlanta, GA for 7 years. :0)

i saw the package, and thought, no, the best mac n cheese is made with a cheese sauce using a few kinds of real cheese, not a box. but then she opened the box, and i saw that's what it was. when i want a great mac n cheese, i make a thick sauce with milk and flour, then melt different cheeses into that. edit. i posted too soon.

I make my own cheese sauce for Baked Mac and Cheese, I use real cheese and light cream and make it using a double boiler.

THIS. WAS. AWESOME! Washington State was the first U.S. State I lived in, and Beecher's is a staple for me anytime I fly home. They make awesome toasted sandwiches, by the way. I loved the vibe of the video. Truly, as someone said, Mr. Denzel is growing more sneaky by the episode. 🤣 I was so glad to see that you liked the dish and a shout out to the guy from FLORIDA (really? I have to admit, I moved to Washington State from B.C. in my 20's and I think Beecher's took off sometime in my 30's. I travel a lot between B.C., Washington and Texas. I first tried Beecher's at SeaTac and had their mac and cheese and was blown away. I've been a fan ever since. Now that you mention it, I've not ever seen a Beecher's kit or anything at Haggen or any other local PNW market. Maybe it's just an airport thing? I retract my embarrassment and take it on myself. 😆

What's even funnier is the fact Beecher's wouldn't ship to Atlanta's home but they shipped to Florida. Since it's all sealed or dried there's no way it would spoil.

Washington fun fact-we have the only non-tropical rain forest in the world! We also have Mt. St. Helens and a lot of geographically interesting areas. Puget Sound is like having an inland sea and we have commuters whose primary transportation is our ferry system. If you visit, don’t miss the San Juan Islands-they’re gorgeous!

I have lived in Washington State my whole life and I have never heard of Beecher's Macaroni and Cheese. I make mine from scratch with a Bechamel sauce with dry mustard in it, Irish Dubliner cheese, some sharp or medium cheddar cheese and some parmesan cheese. Put in a baking dish, then I add dry bread crumbs and some cayenne pepper sprinkled on top. It's rich and decadent.

Another note - We're called the Evergreen State because we're in the Pacific Northwest where we have mild and consistently gentle rainy weather. So we are GREEN GREEN GREEN. Very beautiful. And yes, lots of big Christmas tree pines.

Although at this very moment we are white, white, white. Having a big snowstorm going to get about six inches of snow. Sigh I am not looking forward to the aftermath, we don’t get much snow in the lowlands (sea level). So it won’t be easy to clear it from the roads, no equipment. Last big snow, last year right after Christmas, it turned into ice and I fell and broke my wrist, me and 27 other locals, that is. We flooded the ER and most of us had surgery around the same time too. I call that my personal arm-aggedon. 😅 still dealing from the after effects; have to have surgery next year to have the plate removed. So long story but not excited about snow anymore, which is a shame.

@@Pterodactyl-kn3ve Exactly, without irrigation the Eastern side would be as it used to be a High Desert. The 206ers love to vacation here but think they can dismiss the people that live here. I don't recall any 206ers helping the East side in 1980 when Mt. St. Helens buried us in ash. But typical for the way they think, it's all about me,me,me for the 206ers.

Excellent skills, Atlanta! Whisking the butter and flour together is called a roux, and then by slowly adding the milk you create one of the fundamental kinds of sauces called bechamel, usually flavored a bit further with some spices. That bechamel, or white sauce can be altered in a lot of fun ways. Including one of my favorites, making southern style gravy. It has a slightly different approach though. Instead of using butter as your fat source in the roux. You might try first cooking up some ground pork seasoned with garlic powder, cumin, a small handful of fennel seeds, and some paprika. After the meat cooks remove it from the pan and add your flour to the grease left behind, make your roux and then slowly add milk over low heat till it thickens. Add your meat back in and give it a stir. Served over southern biscuits, or scones if y'all have them, or maybe even some nicely browned toast. Glad to see you grow in your skill and appreciation of cooking. have fun !

Everyone needs to know how to make a roux and then progress on to bechamel. I have a the oddest, but very tasty, recipe for creamed tuna. Skip the peas. Add tinned diced roasted green peppers, seasoned salt and paprika (you've added enough paprika when your gravy is a nice light salmon color). Serve on torn toast. Yum.

Thanks for explaining everything thing in the intro. Your food always come out pretty solid. My niece cooks very good for her age,especially when she was 11,was making entire amazing meals. So watching you reminds me of her,and I hardly ever see her because I'm always busy. Very good video 👍🏼

I think if you toast some bread, or even garlic bread if that’s what you like and crumble it over the top it gives a crunchy contrast to the mac & cheese which is amazing. I think you would put the crunchy topping on in the last 10 minutes or maybe less depending on how hot everything is you don’t want it to burn but it should be warm.

​@@yournewzealandfamily they are from pikes place but are found all over in seattle. like literally costco and every supermarket sells it. and its really good mac and cheese! i havent been to many games lately but im pretty sure most of the major sporting teams sell beechers inside the stadiums. its "gourmet" mac and cheese

Thank you! I used to live in Washington State and just yesterday I was racking my brain trying to remember the name of the Washington cheese-makers that I loved when I lived there. BINGO! It was Beecher's. If you ever get a chance, try their white cheddar cheese curds. Lovely. Another fine cheesemaker in the Pacific Northwest is Tillamook, from the Oregon coast. Their extra-sharp cheddar is delicious.

Tillamook extra sharp is my absolute favorite. I even saw it in a small SW Missouri city that I visited this past summer. I guess people around the country are discovering Tillamook's dairy goodness.

I only discovered your channel in the last few days, and have been watching many videos, so this is more of a summation comment, than to this particular recent video. You guys are the best. Beautiful country (NZ) and family. While not the entire focus of the channel, I appreciate your reverence and solemnity when watching serious videos about the American Flag, history, military, and more. On top of that, your jovial and fun reviews of American snacks to Taco Bell to Costco and more. Appreciated. As a Ford man with a big F-150 and 5.0 V-8 - your Ford Ranger Raptor - love that truck. Even we only got those in the USA recently. Saw you fill it with diesel at Costco. I need to do the research on that motor. “Motor” haha, another American term. Keep it up. I watch with the family, and we love you guys. One other thing we love - those windows - convex - depending on perspective. Look forward to everything you guys do.

Just a tip…never rinse cooked pasta. Simply strain and return to pot. Rinsing removes valuable starch that helps the sauce adhere to the pasta. 😉😁

I'm in Washington now, and they sure do love that Beecher's. :D Also, pro tip: have somebody pick you up a rubber spatula, that way you can scrape all the flavor (or in this case, cheese) out of mixing bowls and pots/pans. I call that utensil the flavor saver, so much of the goodness gets left in the mixing and cooking phases!

The thing about the trees: There are two types of trees: deciduous and coniferous. Deciduous trees and shrubs lose their leaves in the fall and regrow them in the spring. Coniferous trees have certain characteristics that make them different from other trees. The one characteristic that really makes coniferous trees or conifers stand out is the presence of needles instead of leaves. Additionally, instead of bearing flowers or fruits, conifers also have cones (like pine cones) that act as seed pods for coniferous trees. Most types of coniferous trees are evergreen, meaning that they stay green all year long. Some types of coniferous trees will shed their needles throughout the year, they do not lose all of their foliage at once. The oldest coniferous trees in the west, specifically California are the giant redwoods and Giant sequoia. Giant sequoia are 3000-3500 years old. There are a lot of “tree lovers“ and “Tree huggers“ in the west, specifically California. I’m a tree hugger and I ground myself with long walks and hugging trees❤ So many animals live in the trees and in their forests. Different animals, insects, and birds live in different heights of the trees.

Actually, the oldest trees on Earth are the bristlecone pines. Most are located in Inyo National Forest, in California. The oldest, Methusaleh, is almost 5,000 years old.

One thing: Never rinse any pasta. You want the starch to hold the sauce to the pasta noodle. Other tip: Buy a small bag of plain salted potato chips. Open the bag just a little to let the air out and crush them with your hands through the bag. Spread all over the top of the Mac n cheese and then bake. Otherwise, everything looks pretty tasty! Mac N Cheese is the best comfort food!

One thing: You don’t need the starch from the pasta in Mac and cheese if you’re making the sauce from a roux. Once you emulsify it with the pasta you’re golden. Let them cook.

Right about the rinsing of pasta unless a pasta salad is being made then its better rinsed. I don't like adding a starch to a starch so I don't like potato or beard toppings on M&Cs. Cheese works for a topping as cheese in in the name.

When you drive across it almost looks like someone just ran out of paint when adding the trees.

Love this video!!! Suggestion for when you do California - the “Cali Burrito” originates from San Diego. It’s a surfer delicacy. 😊 Giant flour tortilla filled with carne asada, pico de gallo, cheese, guacamole…and French fries. Trust me, it sounds weird, but it’s out of this world! Hint for when you are constructing the burritos - layer the fries right on top of the carne asada, then after you wrap them and turn them over, let them sit for about two or three minutes. All of that delicious meat juice and spice will soak into the potatoes, and it is CHEF’S KISS!!!! *edited because autocorrect doesn’t know that “pico” is a word. Lol.

Also people remember that Atlanta has school. She's obviously very intelligent and her parents obviously support her. This was awesome to watch, as I am from Spokane, WA. The 2nd largest city in Washington state, and on the far eastern side from Seattle, where Pikes Place Market is located. Fun fact, Pikes Place is mostly known for their fresh sea food and the "fish throwing". I saw an episode of the best pizza in the 50 states and "The Flying Goat" from my city, Spokane, WA, was on there. I love my New Zealand Family and thank you for all the videos, it's a nice escape from this crazy world in which we live. Wish you all the best, stay healthy, stay happy, and always stay, you!!!

Controversy time!!!! I have to give you a hard time about this. I think most Washingtonians would agree that beechers mac n cheese is a “Seattle” dish not a “Washington” dish. Meaning, its a must have if you go to the pike place market. And preferred in the supermarket mac n cheese isles in Seattle. However, outside of Seattle, An apple or cherry crisp more accurately represents “Washington” if you arent going for the popular home cooked seafood dishes like salmon or olympia/pacific oysters. A crisp is a common sweet dessert along with a scoop of vanilla ice cream. In the early fall, add some hot apple cider. For the adults add a cap full of cinnamon liqueur to the cider. In markets apples are heaped in bins to overflowing. Its almost a sin to not bring apples home. In the summer it is cherry crisp. Road side markets sell fresh yakima cherries. Again, its almost a sin not to pick up a bunch and spit seeds out the window as you road trip through Washington. I personally pick wild blackberries and make a blackberry crisp. I also make blackberry vinaigrette at the same time. Anyways. Ya. Be careful that you arent mistaking popular city dishes with state favorites. That said, our state food is a freakin onion. Not a dish. Lol. Beechers is the clear choice over an onion. I think this calls for a do over. But not in shame. Just for accuracy.

Great vid! I think you are going to have to set some "Denzi traps" for the kitchen. Too funny with the remote control. :) I'm not from Washington, but we make our baked Mac & cheese to be less soupy and put cheese on top for the last few minutes. My fav. way my Mom would make it especially on snow days (school called off due to the amount of snow and dangerous roads). Can't wait for the next one!

Looks tasty, but Washington (as others have said) is more known for other things like Ivars Clam Cowder, Coffee (Starbucks), Kirkland brands (Costco started here about 10 miles from my home). Oregon is famous for its Tillamook Cheese, and seafood.
