Zeaxanthin in the human body protects the retina from the sun's harsh rays. Therefore, both plants and people require zeaxanthin to protect from excess solar radiation. The lady was probably thinking of that research but mistakenly refered to it as photosynthesis

Humans or any other living physical specimen other than plants cannot photosynthesize. You may have made a comparison to how photosynthesis and humans in a way have similarities, but the woman in the video did not. Well I see 3 types. First, every FE'er I've seen who was asked about other conspiracy theories enthusiastically believed them long before they ever found Flat Earth. So guys like Mark Sergeant obviously started off honestly thinking he was peeling away the layers of some big secret. By now he has achieved a level of admiration from a group that he loves. That coupled with the fact he's making a good living off of his new found celebrity ensures he will double down even though by now it's clear he's a bit embarrassed when a respectable reporter calls him out. The other 2 types really do believe it. Like the people who can't wrap their minds around concepts(such as how huge the earth is and what a tiny sample of it we can perceive from our perspective even with elevation) that are needed for them to understand their logic is flawed. These are the folks who wonder why items on the opposite side of the world don't fall up. Not saying their stupid, they just don't think that way. Earth is flat. We can see Mount Canigou from Illusia, France which is 175 miles away. On a globe earth model the top of Mount Canigou should be a MILE below the horizon but we can see the entire mountain.
