Not sure about the offside decision. Courtinho's shot was deflected by a Newcastle player into Watkins path. Surely as a Newcastle player was the last person to touch the ball before Watkins scored means he is onside. Do VAR know the rules ? or have the rules changed ?

When Coutinho played the ball, Watkins was offside. Deflections only count if they come off the attacking team.
