Every city has its own style of puri sabzi/bhaji….we have puri served with chholey+aloo sabzi+aloo launji (khattey-mitthey aloo served at room temperature…not hot)+ gajar/gobhi/kachalu achaar (varies according to season and outlet)+ pyaazz or vinegar dipped pyaazz…..we get halwa separately and it is suji halwa in summers and gurdd halwa in winters

Upma is also known as Khara Bhat in Karnataka & Sooji halwa as Kesari Bhat. The combination of both is Chow Chow Bhat

To make masala for masala does. First boil aalu and keep it as side. Take a kadai pour oil after getting heated add sarso seed onions curry leaves turmuric and saute.after saute add potato to it and mix it well add also tomato to it .add salt and finish with dhania leaves.

Poori ke sath sambar nahi isko kurma kehte hai!! It is thicker than sambar and has more veggies and pulses!! It tastes different and heavenly... Every dish served with different types of sambars, kurmas, sarus, hulis, rasams, bhajis etc which is difficult to differentiate for non locals people think all liquid food is sambar!! Which is completely wrong notion..

Khara Bath (Upma) is similar to upma but has roasted masala. It is made of rava/ sooji and vegetables. A popular breakfast dish relished all over Karnataka, Khara Bath also known as Chaw Chaw Bath. Khara Bhath is available in all the South Indian restaurants along with Rava kesari which is like Sooji Halwa.

Previous was sheera (also called suji halva in north india) which is sweet made of suji and next is upma which is not sweet but still made with suji I.e. rava.... both are very soft... sheera generally ate as sweet dish whereas Upma as snacks and breakfast item Also main ingredient suji in both but other ingredients different You can check cooking videos for sheera and upma

the Dosa which he had was mysore masala dosa in which they add spicy red chutney ( not added in regular masala dosa) along with potato masala. and the halwa is called Rava Kesari or Kesari bath not upma thought it is also made from Rava (Rava means Sooji) and what he had with poori was vegetable kurma not sambar and along side was coconut chutney .

Potato Masala is Sagu the poori side dish is called palya a dish made with vegetables . Halli means village . For upma refer to Basic upma recipe of Vah re Vah chef

It is just chilli and garlic chutney that is spread when the dosa is spread and cooking.

Two things. What he ate with Puri is called Saagu and not sambar. Saagu is a south Karnataka speciality. Also it was not upma that he ate. Kharabaath he ate unlike upma has no green chilly spice. We add a ting of Vaangibath powder for spice along with finely chopped vegetables like beans, carrot, capsicum and onions.

As punjabi south india food pehli baar acha nahi lagta thoda time lagta hai par ek baar khane lag gye ..phir nahi bhulta south indian food taste...i like dosa idly vadda lemonrice .curd rice. Biryani..lacha prantha..samber coconut chutney etc

You guys are wrong Even our food in north India doesn’t match with each other. Himachal’s food is totally different from Haryana and Punjab. UP’s food, Rajasthan’s cuisine are totally different. Uttarakhand’s food is also different. Pakistani punjabi food might match a bit with Indian Punjab but rest it’s totally different

Khara baath is nothing but sooji upma. Kesri baath is sooji+sugar+ghee+dry fruits Those Puri are also made up of sooji+maida, saagu(due to North Indian people) is actually Saaru(South Indian people) Puri is not equal to bhature... Bhature is made up of wheat flour. If you ask both khara baath+kesri baath, that's called Chou Chou baath... For idly, thin chutney, For dosa and Puri, it's thick chutney
