It's TV.... Honestly, from "Hell's Kitchen," a lot of the cooks who were on the show said that a few things would be switched or changed to cause some "issues." Such as the oven not working as it had before... replacing salt with sugar... Things to cause extra annoyance. Even Heather, one of the winner's said Gordon screams just to add more drama and "over embellishment" toward situations. HERE, on Top Chef the fire provided an opportunity to cause some mayhem. As many have said: If you had capable cooks who take the job seriously.... then why have a television show? It's for the ratings...
