I always thought he was affectionally calling him 'NickEllis' instead of Nicholas since Coach is the head of the group, and is therefore a bit of a father figure for the other survivors. Nick's complaints and overall attitude would oftentimes make him seem like a capricious kid, and since Ellis is the youngest of the four this would explain the little NICKname.
