This Nigerian chicken stew(red tomato stew) is aromatic, flavorful and simply delicious.

The classic Nigerian stew used to be prepared with a lot of oil, but in this chicken stew recipe , I made use of adequate amount of oil, but if you want an oil-less Nigerian stew, feel free to scoop out as much oil as you feel okay with.
Below is A DETAILED LIST OF INGREDIENTS AS USED IN THE RECIPE
For boiling the chicken
- 1kg chicken(whole or chicken drumsticks)
- 1 medium sized onions(sliced)
- 2 tablespoon garlic powder
- 1 tablespoon ginger powder
- 1 tablespoonful oregano/thyme
- 1 teaspoon rosemary(optional)
- 1 tablespoon curry
- 3 tablespoon seasoning powder(to taste)
- 2 to 3 cups water
FOR the nigerian chicken stew
- 2kg Fresh Tomatoes or tinned tomato puree(the watery type)
- 5 large bell peppers(tatashe)
- 5 Habanero Pepper (atarodo)
- 1 medium bulbs Onion
- 4 garlic cloves
- 1 thumb ginger
(blend the 5 ingredients as seen in the recipe)
- 500ml Vegetable Oil
- 1 medium bulbs Onions(chopped)
- 1 bay leaf
- 100g Canned tomato paste(the smallest De Rica brand thick tomato paste(optional)
- chicken stock from the boiled chicken in recipe
- 1 1/2 tablespoon Thyme/oregano
- 1 1/2 tablespoon curry
- 1 tablespoon seasoning powder(to taste)
- 1 tablespoon seasoning powder
- Salt to taste
- the boiled chicken as seen in the recipe

Hello dear sorry to ask you, I'm Italian and I would like to make this amazing recipe for my BF but i'm in doubt, he told me that usually in this stew you can also find beef (can I add it??) and also, what kind of seasoning should I use when boiling the chicken? I should check them here in Italy so if you can give me a list of what you used :) thanks a lot

You mentioned "seasoning powder". Can you please be more specific. Are you talking about McCormick poultry seasoning?

I was wondering, are the measurements correct? 2kg tomatoes alongside 5 bell peppers seems a bit much. I'm currently the making the recipe and the consistency is very watery, and its taking quite awhile to dry out

Yes it is correct Wunmi.Did you add a lot of water why blending? What type of tomatoes did you use? some tomatoes are more juicy while others are bulkier and less watery . But all the same, just be patient your stew will turn out divine 👍👌

Hi Lilian. I found your post on NigerianFood TV but the video was a welcomed bonus. I made this stew last night for my Nigerian boyfriend. I was worried because I couldn't taste it (I'm vegan) but everything turned out well. He smiled and told me I nailed it!!! If you’re concerned about oil, you can use avocado oil. It has a high heat point and it won’t go rancid and it has much better fat in it then canola or vegetable oil. My dude makes this all the time. He sent me this video so I can make it for myself. Thank you for sharing this!

I use ASLI brand. I parboil for jollof or white rice. But just rinse for fried. I hope this helps

You know what when i was younger my parents used to use brown rice. It would be washed a few times. And actually i remember cooking the same way until i became more complacent and chose other rice like basmati and long grain. The washing would consist of heating the rice on the stove to warm and then pouring out the water and redoing this. This would have reduced the starch drastically. I think its high time i went back to this method....

This was SOO delicious!! I loved it even though my stew turned out unbearably spicy!! I used three seedless habanero peppers, and one large Mexican “chile güero”... and it was painful to eat. Regardless, my family ate it all and I will be making it again with less habanero peppers!!!

I got a question. I can’t handle habanero peppers, what less spicy pepper would be a sufficient substitute? Or can I just omit the habanero peppers altogether?

You can use any hot pepper you can handle, but if you are not into spicy, you can skip it.

Hi Joyce, for 20 minutes at 180ºC or until crisp. And yes place chicken on on medium high and cook until tender

No, you can cook it with less oil but watch it closely. By the way the excess oil is usually scopped out and use in bean porridge
