TURKISH BEEF KEBABS, SAFFRON RICE AND GARLIC YOGURT SAUCE
* Ingredients for the kebabs:
- 1 kg beef mince (with fat)
- 1 cup red capsicum
- 1/2 cup green capsicum
- 1 cup onion
- Handful of parsley
- 1 cup cheddar cheese
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1 tsp crushed green chillies
- 1 tbsp black pepper powder
- 1 tbsp salt
- 1/2 tsp Chili flakes
- 1 tbsp paprika powder
- 3 tsp zeera powder
* Ingredients for the rice:
- 1/2 kg basmati rice
- 6 tbsp oil
- 1 small onion sliced
- 1 tsp crushed green chillies
- 1 tsp garlic paste
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp whole zeera
- 1/2 tsp saffron
- Salt to taste
* Ingredients for the sauce:
- 250 grams yogurt
- 2 tbsp mayonnaise
- 1 tsp lemon juice
- 1 tsp garlic powder
- 1 tsp zeera powder
- 1 tsp black pepper powder

Really good recipe will definitely try for saffron rice my irani friend told me if we crush saffron with some salt or sugar in mortar and pestal thn the flavor comes out even more even the color i have tried it and it works great do try!!

Can we use chicken mince?? And instead of parsley can we use coriander?

Sorry to jump in! Chicken mince, if used, should be made from thigh meat so there is enough fat and flavour. Coriander will give it a desi taste. Parsley is needed for a Turkish and Middle Eastern flavou.
