You should make panko shrimp. It is extremely simple. Peel (leave tails), butterfly the shrimp, de-vein, egg wash, panko, then deep-fry. Super easy and I serve with siracha mayo and soy sauce. Only time consuming part is butterflying the shrimp. You probably don't need to butterfly but it does come out really pretty. Since you usually pack light all you will need to bring is an egg, panko, and soy sauce. The rest is optional

Butterfly/popcorn shrimp is one of my all time favorites! So stupid simple, but so dang good! Don't even need a sauce if the breading is well seasoned. I even love shrimp without seasoning of any kind. Just straight water boiled is delicious.

Fun fact I used to do security for omega protein their fish oil refinery, and the bait binder is just boiled up pogey that is dried at a temp of 600 degrees I believe and it is turned into that powder.

Anytime I'm going specifically for shrimp with a cast net I will drag the net slowly across the bottom back towards me. The net will "tickle" the shrimp of the bottom straight into your net where they will get stuck in your net. So not only will you get the shrimp you caught on the initial throw but you'll get "extras" also.
