Chances are that the lamb or goat was slaughtered that morning... if you look at the meat it looks very fresh, the fat and connective tissues are still very jiggly so it had no time to dry out.

I don’t know where your from, but in Pakistan, the animal is slaughtered early in the morning, sold by the butcher cooked and eaten by lunch time, there is no concept of storing meat in Pakistan. In this video they started cooking in the morning and finish cooking in early evening to serve for dinner. Hope this helps.
