I grew up in Howard County. When my hubby and I retired seven years ago we moved to North Carolina near the Outer Banks. Hi, Louise, we've made your Mexican Bake twice within the past four days, freezing the leftovers for later. I didn't have breadcrumbs, so I tore some flour tortillas into ragged strips and tossed them with cheese for the topping. Ten minutes under air-fry and it was delicious! I love my Ninja 5.5 qt. my kids bought me a year ago July. I have not used my oven or stove since then. I came across another ninja 6.5 qt. On the marketplace for $50.00 so I grabbed that up. Now I can use both at the same time. Love all your videos. Keep up the great work. ❤

Your right, I grew up with my Moms pressure cooker and yes I am afraid of them. I have used this foodi and feel completely safe, I actually steamed yesterday for the first time, green beans came out great even though it was venting the whole time. I am happy with the foodi. TFS love your recipes!

Found this recipe and gave it a try on stove top. Omitted the peppers Added 1/4 tsp chilli powder and blk pepper. Drained can tomatoes and topped with beef stock. Browned chopped onions and 1 clove of garlic.. 2 cups liquid to 1 cup jasmine. 20 minutes low after rapid boil. I added fresh corn from garden off cob. We added a cup of grated cheese and mixed. It was great with some more cheese and some taco sauce on top. Next time finding chillies and using liquid towards the 2 cup for rice. Simple meal everyone inhaled quickly. Thanks

I haven't used my stove since I got my Foodi. It does it all plus I'm saving money on my power bill. If you bring it to temp using saute it pressurizes quicker.

Just brought myself a ninja foodi for my own xmas present, lol! And I didn't realise that it had a dehydrater function, I took all of the leftover bread and buns that I threw in the freezer or had gotten a bit stale that I normally would end up throwing away, and put it in the foodi to dehydrate it and then used the food processor to make bread crumbs, it did take the most part of a Sunday to dry all of the bread in small batches at a time but the ideal of not wasting old bread was wonderful! I did put the bread crumps in a airtight container and back in the freezer but because the moisture was gone it didn't freeze into a soild mass. I also dried some rye bread with caraway seads that I think I will use for swedish meatballs or maybe use the bread crumbs in stuffed cabbage haven't decided yet!

I made this tonight and so surprised how one can cook up a meal so quickly as this dish! I used one cup of Jasmine white rice with one cup of beef broth. My rice cooked up too much as the extra liquid took over six minutes to bring up to pressure and then pressure cooked for another four minutes. Also natural release for four minutes then manually released. Then I added crushed dipping Frito’s and Mexican shredded cheese and AC for 2 minutes. Maybe too much time to cause it to be drier? Next time I will use only 1/2-3/4 cup of rice and stick with the full cup of beef broth. I drained the can of black beans but did not drain the Mexican Corn as the can of corn did not have much liquid in it. After all was done cooking there was not any liquid left, it burnt a little on the bottom and the meal was drier but good! We added Salsa and whole jalapeños when we put a nice size amount on our plates to eat. The salsa really added the wetness and goodness to the dish! I bet this recipe would make a great topping over a bowl of fresh green salad 🥗 and eat it like “taco salad”.

The Salted Pepper I think I went by your instructions in the written recipe and added only 1/2 cup of beef broth, drained the tomatoes and black beans so that may explain why my Mexican Bake was drier and burnt a little on the bottom. Looking at your video your measuring cup looked like it had 1 & 1/2 cup of beef broth. Also I did the Natural Release for 4 minutes from your written instructions, whereas you did the quick release. Now I’m confused 🤷♀️ about the amount of time to pressure cook whether using white rice or brown rice. Did you edit the written instructions and amounts of ingredients after you cooked this recipe for the first time. All in all my recipe tasted good but on the drier side. I really liked the looks of your Mexican Bake after you drained the extra liquid.

I've been watching a bunch of your vids as I have an Instant Pot and can use some of the recipes. I'm also looking at getting a Ninja Foodi Blender and have been enjoying those vids as well. Quick tip for the ground beef if you want to get rid of any grease. You can put the raw meat in a stainless steel container with holes and pressure cook it above water (obviously needed to pressure cook) for the desired time. I think I did it for around 5-8 minutes ... can't remember right now. Then when it's done you have cooked ground beef already drained. Toss the water with the grease it in and carry on.

@@TheSaltedPepper I did look at the Mealthy Crisplid a while back. I'm in Canada and can only seem to find it on Amazon and it costs more than my Instant Pot did. I can actually get it shipped from Amazon U.S. cheaper than buying it from Amazon Canada. RIDICULOUS! LOL The blender is sold out almost everywhere here. I'm just going to keep an eye out for a sale. I make hot sauces and salsa so along with the soup options of the blender I'll likely be getting one in the near future. Thanks for the reply and I look forward to watching future recipes you post.

It does take a little while for it to heat that element so if I want to round something for three minutes I put four minutes on it and then what I do is just look but it can take the four minutes

I saw a review of the Foodi a year ago last October, it wasn't available here at the time, I knew it would be here soon and had to wait (not very patiently!!!) I've loved it, I live alone and recently decided I want to make my own yogurt, my Foodi doesn't have a yogurt setting, so I decided to buy an Instant Pot Duo Mini, almost when it arrived, lockdown happened, so I had difficulty getting filtered milk (I prefer to do the cold start yogurt) so I'm using it to do things like side dishes. I'm hooked on both of them 😊

Just catched you channel; love it! After I saw how much liquid you drained, I thought, OK, just drain the excess liquid initially. Then, I got to thinking, the recipe would be great in a baking dish w/ a cornbread topping (e.g., Jiffy corn muffin). I use a wooden spoon the adjust the pressure nozzle after the food is done. It scares me to touch that thing. But I love my pressure cooker.

the keep warm button should turn on once the pressure cooking has finished. At least in my 6.5 Qt foodi it turns on after pressure cooking.

Joseph DeLuca it does automatically turn on, but there are some foods that you would want to natural release without the keep warm on. You can turn it off after the pot comes up to pressure by pressing it and the light will come on, press it again to turn it off. Then it will not automatically come on after the pressure cooking cycle is done. I try to remember to do this with all meats I pressure cook.

Before you added the cheese maybe you could have left the lid off and hit saute for a bit. This would let the fluids boil down a little. Then it would not have been as soupy.

I could have, but it was quite a bit of liquid. I should have just strained it before putting in the cheese, but live and learn, right? I have revised the recipe and it's in the description... got rid of all of that extra liquid and it's really good!

David Lemon I wonder why that happened. I made the revised recipe a couple of times and it worked. The funny thing about PC is one little difference as small as brand of foods can change things. I’m so sorry that happened!

@@TheSaltedPepper Looks like some of the beef fried on the bottom.. I just stirred it and it worked the second time... I decided to put the food in a baking dish ... It didn't have but a 1/4 cup of liquid.. I drained.. I spread it out.. crushed the chips.. and added the cheese.. and now I'm waiting for the oven to come up to 450... I'll bake for 30 minutes and i'll update ya... It looks amazing...

Like your vids one thing I saw was that you did the quick release with rice the instructions call for a natural release it might have come out thicker I will try it tonight I was looking for something for dinner thanks

Robert Jorgensen The brown rice was a good texture, I would be concerned about it getting too mushy if I let it natural release. You have a good point though, perhaps decrease the pressure time and add some natural release time with the keep warm setting off. Please keep me posted on how it turned out for you! I haven’t had time to recreate this recipe yet, but I did make a similar one for burritos that was great! That recipe is coming soon too! Thanks for watching and your feedback! 😁

There is probably something stuck to the bottom. Deglaze the pot before going under pressure.

This looks and sounds absolutely delicious! I'm not overly keen on bown rice, but I imagine that as his is cooked all together, I'd not notice. If I was to try this, but with basmati rice, what cooking time, under pressure, would you suggest? Loving your videos, and have just joined your 'Fresh & Healthy' group on FB - I already joined '101'. I'm finding all your posts and videos really helpful - and delicious looking. Can't wait to try this recipie, and others. I'd never used a pressure cooker before I started using the foodi in November, and have mostly used it for aircrisping/broiling, but the few times I have pressure cooked, the meals have turned out great. I just need more knowledge and confidence in this style of cooking, which is exactly what your groups and videos are doing - so, THANK YOU!

obrani22 I don’t prefer brown rice, but I couldn’t tell it was brown rice. White rice cooks much faster, so I would do 2 minutes high pressure with 5 minute natural release.

I have the ninja foodi and love it.....what is the main thing that can cause the pressure to blow lid? And what will happen if Iforgot to turn the vent thing to seal?

The pressure isn't going to blow the lid due to safety measures. The black valve is weighted and if too much pressure is built, it will lift up and release the excess pressure. Just make sure nothing is blocking the valve and it should be removed for cleaning. If you forget to seal the the valve, you won't go under pressure, you will steam. Eventually, you will run out of thin liquid and get the water notice.

Did you know that instant pot has now got a Duo crisp and fry? It does everything the ninja foodi does and it is $100 less. Right now Kohl's has it for 150 or you can also buy a m e a l t y crisping lid and you can airfryer and brown cheese broiling stuff with that lid as well which is $59. Just an FYI. :-)

It seems to take much less time for the ninja foodi to come to pressure than the instant pot. I was going to buy a Ninja foodi next week and then I saw this instant pot Duo crisp with an air fryer and all that stuff. Now I don't know what to do! I have very disabled hands so the least amount of appliances and pots and pans I can use the better for me. When I don't have Home Care coverage I could at least dump a bunch of stuff into the ninja sauteed the meat and onions and what have you and cook a meal or a good meal.

I like your recipe. I had the Ninja Foodi when it first came out. I would of used already cooked rice so you would not had to use so much liquid. I am thinking of trying this.

Thank you so much. I was very surprised that the brown rice didn't absorb more of that water. I realize that there isn't the evaporation like on the stove, but that was a lot of liquid. I probably would have used the sauté function for a few minutes to evaporate some of the liquid, before adding the cheese, but it looks good. I can almost smell it.

In the corrected recipe, you switched to white rice. How much liquid if you stick to brown? I would assume it would be the same.

Thank you! I would probably just increase the rice by 1/2 cup and add another can of black beans. You might need to increase the broth a little (probably to 3/4-1 cup) to make up for the lack of juices from the meat and the added rice.

Im still waiting for ninja foodie to arrive here in Sydney. But I'm definitely getting one as soon as it becomes available. I'm currently using Tefal Cook4me and it has an automatic steam release - plus it won't let me open the cover as part of its safety feature. Just curious, the vent/seal on the Foodie, is it not automatic? Loved the recipe btw new sub here x

The Vent/Seal on the Foodi is not automatic. You can either let it natural release or manually release it. You also have to remember to set it to the seal position when cooking under pressure. The lid cannot be removed while the pot is under pressure. If you use the steam function, you set the valve to vent and then you can open the lid to check on things. Hope that helps! I think that some things like soup tastes really flat without a tablespoon of oil added to them if there is no natural oil already from the meat or what have you.

I have my own recipe close to yours Well I should not have added the Doritos to pressure cook it dried it out to much and i didnt care for the texture of them or maybe add more broth not sure or next time I'll just crush them and put them on under the cheese to air crisp until golden Hahahaha I just got my foodie so I need lots of practice so I love it and love your videos and ideas I'm a one pot meal kinda gal when ever possible oh the Doritos are salty keep that in mind also

No, not at all. Crushed tortillas would be great or even fritos.
