Thanks for watching! You can use any dried corn for this, which is sold in most stores, but if you’re looking for traditional Indigenous varieties of corn, check out the Indigenous Food Lab Market - they ship! Also, if you don’t feel like making your own wood,ash, which is just the ash from any clean fire, then you can also buy wood ash from the IFL as well!

Very timely as I harvest my first white corn crop! Thank you for this! After watching this and a handful of other videos I'm confused if I should have hulls to actually work of during cleaning - I didn't, but the water was nice and swampy - did they dissolve? I used pickling lime as I didn't have ash.

Hello! I loved this video and the information you are sharing, as well as having binged-watched many of the Indigenous Food Lab videos today! What material for a pot/pan is recommended for nixtamalization? Is an aluminum pot safe or is another material recommended? Thank you!

Thank you so much for watching along! As far as the pots go...don’t use anything reactive. We prefer stainless steel, seasoned cast iron, or enamel. Avoid aluminum and avoid anything with a nonstick coating.
