I was curious if the cookies would turn green! I’ve baked with sunflower seeds before and the chlorophyll made them turn green. 😝 Still perfectly yummy, though! I’m amazed how simple these ones are. 🌻

This is great, I’ve been doing good and cooking lessons for my community in south Texas. I love putting these together and sharing the recipes with the elders, but I’m starting to run out of ideas. I’m trying to stay true to foods we had available in south central Texas and northeastern Mexico. Which was a harsh region to live in. Hiwever sunflower seeds are definitely one of those food sources.

Would honey work instead of maple syrup?

Can the cookies be shaped then frozen for baking later?

Would pepitas have enough oil if I substituted them for the sunflower seeds? I cook for a picky eater 😉

Absolutely! Pepitas would make a great substitute for sunflower seeds in this recipe. Let us know if you end up making them!
