He didn't have an off-plate. It's just the stall signature style of texture which most people like. The uncle doesn't cook it the way like some others with springy noodle texture. Speaking as someone that has been eating for years.

An interesting one that I would like your take is Hai Yan at Telok Blangah Rise. No quintessential cockles but to me it’s surprisingly full of flavour and texture.

telok blangah rise HAI YAN is a stall i ate for 20 years. its in a very ulu place and no cockles but i still highly recommend it. There is even a beehoon version of it

Agreed on the veg oil. Animal oil has been shown to have shorter strain which the body is able to digest and discharge easily. Veg oil is hydrogenated. think about it, after 30 years, has heart disease dropped?

I think it's critical. a lot of places even use the "cockle water" during cooking and that flavor is just unique to CKT.

Please go to Outram Park Fried Char Kway Teow Mee at Hong Lim Complex it's one of my favorite CKT in sg worth a go but might be a low 3 noodles due to the portion (value for money)

Have had tis for dinner tonite. Ok to be fair, we tabao'd & only got to eat in 1hr later Still, the taste wasn't there. No wok hey, bland in taste actually Ordered $6 + $2 of hum. While portion's generous, the hum r tiny & quantity, measly Got my mom with chin-chye taste buds to try. Tis is 1 of those rare occasions where she commented 'bu ke yi' (cmi) Perhaps today Uncle no form 😅

I feel this is average, okay only. Fresh cockle but thats about it. When I visited there was no pork lard in my noodle. Bias? I hope you went to down this ckt with prawn noodle after shooting

I think they have 2 versions, with and without pork lard. I was too full for prawn noodles after this huge plate haha

You do not need lard - that is guarantee to give you a heart attack - and that is not much fun. I do not ear lard now - and prefer vegetable anyday . And I do not eat butter either - margarine is what I use - and like now.. Food is a personal choice. BTW - my best friend had just had a good heart attack. - and he was into animal fat big time - just like you. His wife has decided no more anilaml fat for him - hahaha
