Yes, you read that right. not all bacon is created the same. There are different kinds of bacon and each cooks differently and has a slightly different taste. The back bacon tastes like a pork chop because it comes from the same muscle group as a pork chop. Also, the bacon flavor that you get, normally comes from being cured and smoked.. so they probably didn't do that, to that 1 piece, which will make it taste like ham. I've had bacon that tastes like ham because it wasn't smoked

back bacon comes from the tenderloin of the pig...not the loin

Thanks for taking time to leave a comment! But I do beg to differ. Tenderloin is a much smaller cut on pork and has completely different muscle structure. This link on google shows that: en.wikipedia.org/wiki/Back_bacon

Ohhhh can't say I've ever had jowl bacon! I'll have to check it out next time I'm at the store. Is that more of a specialty bacon?

@@TheCultureofCookery IN the south its everywhere. You might have to order online or ask a butcher for it. But its a cheap cut of meat that must be cooked well for it to taste amazing. I hope you dive into it as it is a favorite of mine to this day.
