He also seems to know exactly what SAVE-ing is based off one of the phone calls if you've never saved before, he asks you "shouldn't you SAVE?" I feel like he knows, he's just trying to throw the kid/player off the fact that he does.

In my opinion, this feels more like an accurate depiction of how sans would feel after being aware of resets (instead of what transpired in dusttale or any other AU that holds a similar concept) as he doesn't feel like a character that would make any sudden drastic decisions on a dime just cuz something big came up

(loosing his marbles basically) Sure, dust sans is hit with ptsd but this guy is practically hit with a reality that tells him "players have created all these versions of him and his friends just to kill them/toy with their worlds, and that he is also created specifically for that purpose" and yet he deals with it calmly instead of making any drastic decisions. That's the reason I'm comparing it to dust sans

Not gonna lie, Sans is an character that's really in emotional pain, specifically in this context, then any other character in media period. I think he's a pacifist just like the player, but also a nihilist, and so the two ideologies clash, the nihilist side of him is Lazy and depressed because nothing matters to him, his choices don't matter in the end so why bother? but the pacifist side of him just like his brother, wants everyone to get along because if nothing matters then why not make something beautiful before the end? maybe he's the one that discovered that his world is just a video game, and only tell W.D Gaster about it, before he destroyed the evidence because he thought it was too much for everyone to take, maybe he thought they would go completely crazy, and quit his job because it was pointless to him now. no matter what he do, its all the same almost everyone gets killed again and again or everyone happy ending gets ripped away from them. he kill the player they come back and even if he made them quit they can come back anytime they want to. but yet he's still trying to make a better tomorrow, he's determined for a future, a future that matters, a future were no one has to die. I heavy relate to sans even though he'll probably want to be in my situation, the Nihilism, the pacifism, the trying, the depression, the desperation of trying to be happy, to be something more, to build a better tomorrow, the voids in both our hearts that we try to fill with happiness, meaning, friends, family, lovers? even though yes, I did killed him, I didn't felt bad at first, but as I think about the character, the secrets, the hacker ending, etc, the understanding I felt, but my curiously will probably keep on killing him. I really don't think he hates the player, but is just betrayed and disappointed in you. I just love the character.
