Strawberry Cheese Cake Written Recipe by ChatoriChetna
For a 6 Inch Cake Tin
Ingredients
12 Digestive Biscuits
200gm Cream Cheese
3 Tbsp Butter (salted)
2 Tbsp Powdered Sugar for cream cheese
1/4 Cup Whipping Cream
2 Tbsp powdered sugar for whipping cream
200gm Strawberries
2 Tbsp Sugar for Strawberries
1 Tbsps. Lemon Juice
Please note I used a 8.5 inch cake tin and adjusted the quantities for ingredients accordingly.
Method
Finely powder the biscuits in a mixer. Pour the biscuit powder in a bowl and add melted salted butter to it. Mix nicely. Line the base and sides of the tin with a parchment paper. Now make the first or base layer with the help of the biscuit crumble. Smoothen the layer and refrigerate.
In a bowl, take cream cheese and add powdered sugar to it. Mix thoroughly and keep it aside. Please do not use any electric mixer or beater for doing this.
Now in another bowl, take the whipping cream and add sugar to it and whip using hand or cake mixer. Whip until it can hold its peaks. Now combine the cream cheese and whipped cream together gently through cut and fold method. Add this over the biscuit layer and refrigerate again.
Make jam with strawberries, sugar and lemon juice. let the jam cool and then add it over the cheese cake. Freeze for 1 hour and enjoy!
