No-Bake Bourbon Biscuit Roll with Cream and Fruit
Ingredients:
For the Biscuit Dough:
600g bourbon biscuits
2 bananas
Milk (as needed)
For the Cream Filling:
200g cream cheese
2 tbsp icing sugar
A few drops of vanilla extract
270ml double cream
For the Decoration:
Mixed fruits (e.g., peaches, strawberries, blueberries)
Melted milk and dark chocolate
Instructions:
Prepare the Biscuit Dough:
Place the bourbon biscuits in a large bowl and crush them into fine crumbs using a glass or a rolling pin.
Add the bananas to the biscuit crumbs and mix until a smooth dough forms. If the mixture is too crumbly, gradually add a little milk until it holds together well.
Roll Out the Dough:
Place a sheet of greaseproof paper on a flat surface.
Transfer the dough onto the greaseproof paper. Cover with another sheet of greaseproof paper and roll it out into a square or rectangular shape, about 0.5 cm thick.
Prepare the Cream Filling:
In a bowl, combine the cream cheese, icing sugar, and vanilla extract. Mix until smooth.
Add the double cream and beat until the mixture becomes thick and smooth.
Assemble the Roll:
Spread the cream filling evenly over the rolled-out biscuit dough.
Arrange the fruits of your choice (e.g., peaches, strawberries, blueberries) over the cream filling.
Roll and Freeze:
Using the greaseproof paper to help, carefully roll the dough into a roulade.
Place the roll in the freezer for about 1 hour to set.
Decorate:
Once set, remove the roll from the freezer.
Drizzle melted milk and dark chocolate over the roll for decoration.
Serve:
