I discovered that you can make a sourdough starter with no waste or discard. Simply 1 tablespoon unbleached all purpose flour and 1 tablespoon purified or filtered water, mix well and cover loosely. Let stand in a warm spot for 24 hours our so. No need to be exact. Next day add another tablespoon water and flour. About day 3 or 4, switch it up by using a tablespoon bread flour and maybe a teaspoon or two of whole wheat or rye flour. You don't need to stress too much about exact amounts. If it's runny, add more flour and if it's too thick, add more water! After about 8 days you will have a usable starter with no waste!!!

Hi Dal. Thank you for sharing your no-discard approach to making sourdough starter. I can’t believe how many people think you need to discard half every day! I guess there’s a lot of folklore around making a starter and not as many evidence-based recipes.

The first time I made sourdough starter I made it using that other recipe which called for discarding all but 25 grams of it each day. It was 100 grams of water and flour and then throwing out all but 25 grams. It was so wasteful and took almost 3 weeks to get going. I saw this on a You Tube short and thought "I have to try this!" It worked so well I incorporated in to my Face Book group and made videos of it. I've made it 3 different times for the group and each time it only took me about 4-6 days! I just love it!

In fact it is not new l did that for years , and it work , l never understood why people anything !!! I am so glad this method has beeng discarded .

I've heard/read that Rye flour and Caraway Seeds help with the fermentation process.

Hi Paul, you are right! I've learned quite a bit myself since making this video. If I were to make it again I would absolutely use whole wheat or rye but adding the caraway seeds is a great idea as well. Thanks!

I started your method last night around 7:pm......do I start the feeding today or wait a day?

You can feed it again now. The wonderful thing about this method is that you don't have to be exact about time or amounts. Be sure you feed it enough so it's thick, not thin. You can always feed it twice a day if you like and it will probably grow faster. Be sure to switch about day 3 or 4 to bread flour and whole wheat if you are starting with all purpose. Also, you should give it a stir a couple of times a day. You don't have to but it's good to do it if you can. Good luck!

@@carolsferra3582 Yes, you can but if possible, at some point, add some whole wheat flour. It will not effect the flavor but will make it grow better.

I just started a new starter with no discard . After 3 days it started to rise . 25 gr whole wheat flour, same with water then next day , 25 gr bread flour same water and on ….

im on day 5... there was a lot of water on the top and i added more flour (around 2 tbs)... is that okay? 😢

Hi, If there is a lot of water on top, feed it and add a bit more flour and less water. Make sure it's very thick. It's more important to focus on consistency than amounts. I stopped weighing and measuring and now just base how much on how thick it is. It should be very thick once fed, Sounds like you are almost there.
