I discovered that you can make a sourdough starter with no waste or discard. Simply 1 tablespoon unbleached all purpose flour and 1 tablespoon purified or filtered water, mix well and cover loosely. Let stand in a warm spot for 24 hours our so. No need to be exact. Next day add another tablespoon water and flour. About day 3 or 4, switch it up by using a tablespoon bread flour and maybe a teaspoon or two of whole wheat or rye flour. You don't need to stress too much about exact amounts. If it's runny, add more flour and if it's too thick, add more water! After about 8 days you will have a usable starter with no waste!!!
