I recently have been eating a LOT of apples lately and after the video where I was testing different methods to make crispy potatoes, it dawned on me that we could use the pectin in apples to make a fish texture.. SO I ran with it and I am so glad I did because this came out incredible. This vegan fish from apples is almost indistinguishable from real raw tuna!
This was my first attempt with no testing beyond what you see here, so if you have any ideas on how to make the vegan fish better make sure to let me know!

I can see how some would see it as not fish without the interconenctive tissue but I’m just a cook and a forensic science teacher and love sashimi you did the best you could have done with it idk anyone else in the world that could do this ❤good job

Perhaps if you cut the pieces up smaller and try it like a tuna tartare, the texture and flavor would go all the way through.

Maybe you could try poking holes in the cubes with a fork so the pickling penetrates the center getting rid of that apple crunch.

or just use a softer texture apple

Or just toss in sous vide bag and hold it at 183 for 25 min, durning the pickling phase. That would get rid of crisp, maybe less time needed than 25 min.

Mark-- I think the texture and flavor will be significantly affected by the type of apple-- try granny smith. Lower in sugar and higher in acid for instance. We have a 40 variety apple orchard with hard cider apples to fresh eating apples. Thanks much for this specific video for likely will lead us to make a new product too sell through grocery stores and online

Yup!!! This really needs to be tested with lots of different variety of apples. I would be really curious about Granny Smith. I do wonder if red or golden delishish might be the key to nailing it though. *I think* there needs to be some sugar to help the pectin firm.. but there might be enough in Granny Smith with more acid that it firms more.

Seeing you do this, inspires me to ask you to elevate this other recipe I saw recently: cauliflower ceviche. It's a simple grated and marinated cauliflower recipe, but I bet you can elevate it to new heights. Would love to see your imagination run wild on that idea!

❤Absolutely amazing. I have two ideas that are worth testing: * freeze the apples before - because it changes the texture of the fruit, similar to cooking but without softening too much. And *test the process on zucchini or yellow spring squash -- because they are used as a substitute for apples in mock apple pie.

to help with the crunch, i'm wondering if letting it soak in the baking soda longer would help soften them up. however, after googling, it seems that baking soda will break down the pectin so your apples might become too mushy if you let them soak in it for too long. other than that, maybe just letting them have a longer initial brine to really let them soak up the liquid and soften up? i will definitely be trying this

I think the texture is going to be the same with this type of apple. I would experiment more going up the acid scale with apples. Granny Smith being the most acidic. I think that is where the texture will change the most. the shape should hold the texture no matter how you cut it

I tried making ice cream with skyrr and frozen mango, but sadly the mangos were the kind who smell like rotten fish after being frozen. I tried to rectify the taste of the ice cream with a tiny bit of salt, as it can mute bitterness. Sadly instead it suddenly tasted like salmon ice cream 😂

I would have used Furikaki for tge seasoning and probably tried pickle red onions with the apple hopefully they will bled the color onto the apple. Or also pickle actual beets with it but I love pickled red onions they make anything taste better. Honestly I am not a vegan and never will be but your channel has made me eat more vegan foods than I thought I ever would. Can't wait to play around with this recipe and eat more vegan foods. You are pretty much one of the best person to convert me to vegan eating at least for a lot of my meals consists of one or more a day of vegan meals.

@@NinasPlantBasedVeganRecipes What’s stopping me is vegans. Sounds strange but let me explain. I had really over 40 years of bad experience of people criticizing and even acting superior to me a normal person eating normally meat vegetables and fruits. Vegan people left such a bad taste in my mouth from the actions I experienced that it really made me not want to try their food. I came across this channel and at first I didn't think it was a vegan channel and thought well I like cooking so watched and he cooked his food and I wasn't disgusted he never made me feel like he was preaching or looking down on people who ate meat. He had a passion to make vegan food and try making it taste good. Which is rare most vegans I know in person or on social media try and guilt you into becoming vegan. They don't even ask why aren't you considering being vegan sort of like a vegan cult. So after trying the food I actually have nothing against it and found it very tasty but the vegan people I will never associate with at least the majority of them. In fact even if I do eat vegan foods and no longer eat meat I will never consider myself vegan. Just Too Much emotional baggage from dealing with vegans. I subscribed to your channel just now because I feel like you asking me why is much better than most vegan channels do. Got to support the better vegan channels.

Thanks for responding and explaining, that's interesting. I'm sorry you had some bad experiences with unpleasant vegans, not every vegan is like that. In fact, most vegans were meat eaters. I stopped eating animal products when I watched The Game Changers and have been sharing my healthy vegan recipes and how I've improved my health since the change. I was surprised at how many people were verbally attacking me, telling me I'm stupid and to just eat meat. Friends would call me a tree hugger and a tofu lover. It doesn't bother me. I recently learned of an inflammatory sugar Neu5Gc only found in meat, fish and dairy. Pigs have been genetically engineered without Neu5Gc. Interesting, huh? Anyways, I have healthy recipes and a kind community, if you want to check it out; everyone is welcome. Hopefully those other people won't prevent you from making the switch. Wouldn't it be cool to go back to them and say, "I'm vegan, and it had nothing to do with you!" @@lostboy8084

I love these fun, creative and controversial ideas :D I must say, I can totally see how the texture of pickled apples could work well for this BUT you could probably a) pickle it longer or b) steam them slightly if you'd like them to be softer. I remember getting pretty meh apple pies at cafes where they used canned apple filling (you know, the one with chunks) and they were firm yet not crunchy at all. To me this is a much better idea than watermelon though which in my opinion is just way too soft :D

I'm not a vegan but this is honestly one of the dumbest comments I've ever seen. Do you honestly think there is more effort involved in creating this 'fish' apple than there is in putting actual fish on a plate? Fish don't grow on trees, there's a whole industry out there doing the effort for you. There's a reason fish is so expensive these days, there's loads of work involved in it. It also decimates ecosystems. And even if you ignore all the work done by everyone else, cutting an apple into pieces and brining it isn't really much more work than marinating fish, especially if you buy your fish whole. But I guess you must be one of those people that just buys their fish pre-cut into portions and throws it in a pan without any seasoning.

@120 And apple trees take 10 years of maintenence to produce fruit both take effort but 1 actually is fish/looks like fish when you "pluck" it one it an abomination created by food coloring and chemicals. Indeed a whole industry makes fish, but the same can be said with apples. You claim to not be a vegan but are quite fond it seems of the most unnatural appropriation of fish imaginable

Interesting idea! I would try the sousvide method. I guess the vacuum would break all the cells and absorbe the marinade whilst maintaining shape.

Apples are actually the great and simple flavor substitute for vegan dishes, as I had discovered many years ago. So every autumn we had a lot of green apples at home, usually just eating raw or conserve in some way. So ones I have tried frying them in a pan with sugar(depends on sweetness of the apples), salt, black pepper, and a nice amount of garlic(as a usual very basic chicken roasting mix or something), and they turned out pretty much like an oven-roasted chicken, very sweet-sour with that addictive MSG-like taste, and even my meat-loving relatives appreciated that taste. So whenever I have cheap spare apples, I do them like that for stir-fry, or pasta.

Not a fan of poki bowls, but I love rolled sushi. Will be slicing the apples instead of cubing them so they are more like fish slices, and also adding more nori sprinkles to up the fish taste. THANKS for this fish substitute.!!

Do you think this recipe would work with long thin strips of apple? You could use it as an alternative for nigiri sushi. Once it's dipped in soy sauce and some wasabi you probably wouldn't notice the taste difference if the texture is right. Do you think adding coconut oil could help give it a bit more of a fatty taste\texture like salmon?

For some reason when I drained the brine and filled the container with water, they crisped back up. And is the brine used for other things?

So creative! What about using something like rutabaga or turnip? Or daikon or jicama? Also, you can buy blocks of konnyaku, and I bet konnyaku would be a decent seafood substitute for texture. I'd really suggest using more seaweed, and a mix -- like wakame, kombu, nori, & dulse. Also, if you do a seasoning again, when doing seafood stuff, use furikake, not everything seasoning (because then you'll get extra nori).

I served this for a vegetarian friend when I made sushi for a gaming meetup using Red Delicious, He loved it to the point he confessed he missed so much the fishy feeling that veg sushi lacks. I didn't have any algae, but I did have some algae-based suppliment pills that I remembered tasted so much fishier than nori, dissolving 4 of them in the vinegar did the trick for me. Thank you!

@@barnowlwatcher they were generic Spirulina supplement Capsules from a local diet store. If asking about the apples, Red Delicious is the brand. I used wine vinegar too.

Fuji are a great choice of apple. Honeycrisp are similar but have a slightly different flavor. Maybe try something like this with a lot of different kinds of apples to see what flavor is the best?

Can you do this but make them thin slices for nigiri? I’d love to see more mock-seafood. It’s such an under-explored area of vegan food and the best ones so far are either hard to find or aren’t available in stores.

OHHH now I'm curious if you could pickle watermelon for watermelon tuna instead of baking/cooking it......... Will have to give it a try! I've had really good results with watermelon anyway, dicing it, and then cooking out the water until it becomes tender outside and then marinating it with olive oil, caper juice, lemon juice, nori, and soy sauce... And then the end product still has a bit of the sweetness from the watermelon which compliments the marinade SO well, especially in stuff like sushi and poke. So so good. It still keeps a bit of a bite tbh which is not a huge issue but it takes away from the complete fishy texture. If you dice it in even smaller cubes, this doesn't happen though. But I love watermelon tuna (make it all the time in summer), so I am very excited for this!

I'm not vegan or vegetarian but I'm definetly trying this. I love poke bowls but fish is expense especially for extremely fresh that can be eaten raw. Apple are cheap. Thanks for recipe. Also sashimi style would be cool experiment to see.

Tuna always tastes a lot like meat, a lot like iron specifically. Perhaps if you would add the smallest bit of cane sugar molasses that would help!! I am so excited about this. I've always wanted to try Joshua Weissmans tuna poké recipe but did not want to eat the tuna, but I guess now I can :)

I love the healthier recipes on the channel! MIght be fun to see you wrestle with an instant pot. It's my main cooking device along with a Mealthy air fryer lid ever since a weird electrical surge blew my microwave and oven. Like camping but indoors!

Not sure if they have them where you are,but here in Australia in the electricity box they have a thing called a "safety switch" which by law every house is supposed to have,when there is a surge it immediately turns on & shuts all the electricity down.so if you have a faulty appliance that blows it all shuts down & usually won't effect anything else in the house.then you just unplug the dead appliance & turn the safety switch back off.

use the red apple skin to color them. my family makes apple sauce with skin-on and it comes out pinkish red like some cuts of tuna

Maybe lactic acid would be more 'animal' than the vinegar? Also, perlla oil from korean grocer adds a subtle fishy something. Watermelon ahi bakes in the marinade so I might give tjat method a try... Certainly onto something

An idea for mock fish, frozen mango when thawed, as a fishy texture, maybe if you use one that isn’t ripe you could impart some flavor to it.

Maybe leaving the apples in the beet root juice for slightly longer will get rid of the pickle flavor? I would add tofu (and maybe edamame) to the bowl though to add protein

I've seen watermelon tuna but apple tuna is new for me. Looks great, and not too difficult to make! Vegan fysh sauce might work better than (or in addition to) Tamari/Soy sauce.

I attend a boarding school and we used to give apples filled with fish to those that are ill as a 'friendly gesture'. I feel like this is the actual friendly version of that xD
