I am going to be honest: I am probably not going to make any of these since I don't crave fish flavours enough to go though all these steps. Having siad that, I am *super impressed* with your thought-through method of making these! The idea for the "broth" and the choice of ingredients seems great and the results were truly amazing! They looked a milion times better than any (non)vegan fish sticks I've eaten in my life (only had store-bough ones as a treat from time to time). I think some restaurants have to get into making something like that because I''s gladly have someone make these for me (and my non-vegan fam). . Sending you both lots and lots of love! Just fyi for people not too enthusiastic about egg replacer: it's not necessary for breading. You can very well do milk (substitute) and panko/breadcrumb mix. In that case double breading or even triple gets the best crunchy results.

Hey Mark, a possible ingredient to try: in the latest Future Neighbor episode on dakgaejang (note: most definitely not vegan) Daniel mentions that the Korean ingredient gosari - fernbrake, also known as bracken - has a flavor and texture that reminds him of pulled pork. He likes the kind that's packaged in water; Maangchi prefers dried because it lasts in the pantry. Might be interesting to explore.

Cornstarch will only clump when put it into hot water dry that's why you mix it into cold water to make a slurry so when you do put it into the hot water the cold water will help the starch granules disperse more evenly preventing the clumping.

I can't use Panko due to intolerance "celiacs" so i use organic corn flake crumbs & i have only done Katsu with tofu. I will try banana blossom & Bamboo, i finally have an asian grocery i can use, not too much organic but out here in the Australian outback, you have to make do or improvise. I will look at Tabitha Brown too. Thank You! ✨

loving your nerdiness about technique approach - what I found - regarding "egg" batters is that when you season well the "egg" mix it gives much more rounded and pronounced flavour than the spice mix in the dry element . I personally would use same spices from the marinade recipe :)

Definitely makes me want to try out bamboo shoots for a fish alternative. I currently use heart of palm and eggplant as my vegan fishes. Don't care for tofu and banana blossom didn't do well for me when I tried it before. Great video!

Im surprised I didnt turn into a fish as much of their sandwiches I ate once but long ago. Vegan 99% now I am or maybe 98%, this has me salivating. That ocean taste and the crunch mmm lol

Whoo Hoo!! i just bought some banana blossoms a couple weeks ago knowing I was going to make vegan fish! Thank you Mark 🤓, for these new recipes so I can make ever better ones!! I keep looking for fish sticks that can come a lot closer in texture,.taste, & more of a fish stick shape. I really do miss the nostalgia of eating fish sticks as a kid & have really longed for vegan ones that are not so expensive as the commercial ones which also are not available in stores on my area (to my knowledge). What if you blended up tofu with agar agar, heated the mixture, then poured it onto a dehydrator rack and dehydrated it a bit, like fruit leather. Then cut it into strips and layered it up just like in the video? I was just thinking how to recreate something like Cod, that has almost "rubbery" layers.

I’m not vegan, but I enjoy this so much. I’m not even sure where to start a transition to a plant based diet. Major lifestyle changes make me nervous. Do vegans normally learn from family or is something you researched on your own? If anyone has any tips pls share!!

So, little bit late to the party here, but... I grew up eating almost entirely meat. And the way I transitioned into a plant-based diet was... basically, I picked one day of the week to eat vegetarian / vegan. At first, I had no idea what to eat, but I found snacks that I liked, and I figured out some other things. It was also a day where I could try recipes. And it wasn't difficult because it was just one day. Once I had gotten used to that, I added another day. And when I'd gotten used to that, another day. And then at that point, it was easy to just go fully plant-based. My advice would be... if you happen to like food from various cultures, look at some other cultures. Especially some Asian cultures, they have less of a tendency for every meal to require meat as the star of a dish. I cook a lot of Korean food and Indian food. Western vegan food often tends to be about finding replacements for meats, but you can also just make delicious stuff on its own that isn't trying to be anything other than what it is. If any of that sounds good, I can recommend you a couple creators that I found useful.

@saucestache, I love your recipes. I was a diq before, my bad....Hey, when are you gonna start selling some products? I currently eat all the vegetarian and vegan stuff, Beyond, Gardein, morningstar, impossible, tofu, seitan, soy curls, and all kinds of stuff like that. I have made my own faux chicken with skin, and I make a killer vegetarian spaghetti, I use Morningstar crumbles, porcini, truffle, tomato sauce, olive oli, garlic, sea salt and red wine. Love all the new recipes BTW.

I would recommand for more "fish taste" to blend nori in the marinade. And I would have love to see some trad beer batter, maybe trying to do kinda the Filet-O-Fish burger in another video ! Otherwise very good video again ! Really suprise that bamboo actually win. Gonna try that !

I never really cared for fish when I ate meat (25+ years ago!) except for maybe fish sticks, but the last time I had those I was probably 13 haha! It's funny though because I have to say those dang gardein fish fillets are awesome and I buy them occasionally and eat them more than I ever have actual fish
