It’s interesting that no matter how many different descriptions of finger tight, there is one that resonates and helps one to truly understand it. For me, your description; “turn until they catch and then just a little bit more,” brought it home for me. Thank you Carter.

I'm new to your channel. I'm a 35 year canning veteran, but really have been canning with relatives my whole life. It turns out that I am a "rebel canner". That's news to me, as I wasn't aware that my elders were rebels. I will never pretend to know everything about canning. I learn new things all of the time. I am soooo enjoying watching your channel. I've learned some great things, and got some great info, so far. (I've been watching your channel for 4 days now when I have time). Thank you for sharing. ❤

Thank you, Carter, for using allulose in your canning. We have been using it in baking lately, and we love it. Do you think that I can swap allulose for sugar in all of the Pomona‘s pectin recipes?

Welcome, Maria! I have swapped allulose for sugar in all of the Pomona's recipes I have tried. So far, so good, but I'm always aware it could cause an issue with the set. To me, they're all worth trying. Do note that although sugar is not what preserves the product, it does help to maintain the texture and color, where Allulose does not. After a year or so, I notice more loss of color in the allulose products. Hope that helps!
