I know the tops of the strawberries are still good to use and still nutritious but if you throw them out onto your lawn next spring you will have strawberries come up. I do this all the time and my backyard is full of them. They are not as big as the strawberries you can get in the stores but its a fun little project for the kids

It never ceases to amaze me how you go out of your way to include all types of people's needs on your channel. I am amazed because , for example," sugar free" is not what your channel is about and here you are offering a NO SUGAR alternative for canning jam for those of us in need of that. I want to thank you for that because it takes a lot of work to just do your "normal" work for your channel. It is enough to just focus on nutrition rich foods which are the focus of your channel. Also, when people don't have a piece of equipment for one reason or another you constantly give us alternative things to do to achieve the same results that you do but without the "perfect" equipment for the job at hand.. My glucose numbers aren't the greatest in the world and I am always looking for ways to cut down my sugar intake. This was a great alternative to full sugar strawberry jam (my fave btw). I don't always eat the way that I am supposed to as far as that is concerned, but today, with this recipe, I have NO MORE EXCUSES!!😂 That electric water bath canner is NOW on my birthday wish list !!. Fingers crossed for that gift!! ❤️

I love your channel... but i feel compelled to say ... the no sugar pectin.. DOES have sugar...lots even. Its made with Dextrose which is just a sneaky name for a sweetener that the manufacturer slips in. For people with health/diet issues.. its misleading. Keto dieters would be kicked out of ketosis because of insulin spike. But its still a great recipe for everyone else. Ingredients... Dextrose, Fruit Pectin, Citric Acid (Assists Gel), Calcium Ascorbate (Retains Color). Store in a cool, dry place.

Hi Barbara, Great point. The info on the pectin for low sugar/no sugar jam shows "0" calories but I saw an interesting video that said that if our mouth tastes something sweet - even if it is zero calories - can still cause the pancreas to release insulin. Fascinating. Love, Mary

Your videos gave me ALL the confidence to make apple butter, blueberry vanilla jam, and orange marmalade over the weekend. In addition, while doing all my peeling, chopping, etc. I binge watched so many of your videos... and I have fallen in love with your whole family !! I'm 57 years old and dyslexic and ADHD. My dyslexia didn't get diagnosed until middle school, and by then I hated school and was miserable, and a very angry adolescent. They say the reason you don't have to keep your lids in hot water anymore is because the changed the formulation of the "rubber" that causes the sealing. And yes, if you have the old lids the rubber is a lot stiffer than the new ones. 💖🌞🌵😷

You remove the ring (or band) 24 hours after the jars have been processed. The button on the lid should be depressed at this time and you will be able to know that you have a good seal. Sorry, very long comment: Mary darling, thank ever so kindly for this video and all of your videos. You are such a gracious blessing to all of us. I always learn so much from you. We all have our own ways. Many years ago I was taught to can by both my Maternal Grandmother, in Massachusetts, and some years later by a 96 year old woman named Miss Dewey in California. Nana was born in 1906; Miss Dewey, 1873. Each had canned from the time they were girls. Coincidentally, each cautioned me never to use a butter knife or other metal instrument to de-bubble. They stated that sometimes just lightly touching or barely tapping the inside of the jar, especially on the bottom, can cause a jar to crack, break, or burst in the canner or while cooling. I have followed thier tips for more than 50 years of canning on my own, and have never had a jar crack, break, or burst. Both used a slim, flat, wooden stick with rounded edges and bottom for de-bubbling. It was reserved only for canning. Both sterilized it before and after each batch by soaking it in several changes of almost boiling water poured into a canning jar with a small splash of distilled vinegar, (white vinegar), and a pinch of salt. The last soak was just plain very hot boiled water. Each also prepared thier jars and all utensils alike. After numerous rinses to remove all traces of dish soap or detergent, they rinsed their utensils, rings, and jars with water and a splash of distilled vinegar; followed with a good final rinse of plain hot boiled water. Each stated that the water with vinegar rinse helped remove every last trace of possible grease and went a long way toward protecting against spoilage. Each used pieces of sterilized, plain natural cotton muslin dipped into boiled water with distilled vinegar to clean the top rims of their jars before placing the rings.

I think the vinegar is more for the sterilization portion so that you do not get calcium on the lids/rim of the jar that could potentially break the seal. First time doing it without vinegar I noticed significant residue, but we have very hard water. Also a very nice tip with making your own vinegar - no waste is so much better

I never knew anyone to remove the rings from home-canned foods before. I don't can, but I know some people who do, and they never remove their rings. I will refer them to this video, because I am not fond of moldy food. Not that I remember ever getting moldy home-canned food before, but there is a first time for everything. I understand why people can, I just prefer other preservation methods, like smoking or dehydrating or freezing. I know salt-curing is popular, but I don't like salt all that much. I tend to freeze foods. I will be regretting that if the power goes out!

Thank you for always helping us survive and THRIVE with so little 😭🙏🏽😭 I seriously can’t thank you enough for all the tips and tricks for those living with limited means but still want (and need) to be healthy. I love you. Like you was my own motha (said in a 1930s Chicago accent 😆)! Been watching and learning so much from you for the past couple few years and sharing you with my loved ones (who also *love* you) whenever I can. Words cannot express my (our) gratitude, Sweet Lady! Thank you, thank you, thank you. I’m gonna try to comment more, as I know that it helps you with the algorithm. I guess because I’m not sure if you’ll even see the comments but I’m going to do it because I wanna reciprocate your help in whatever way I can. It always shocks me how much sugar goes into jam. Isn't the fruit sweet enough on its own or does the sugar serve another purpose.
@MarysNest
@MarysNest 2 жыл бұрын
Hi Clive, great question! The sugar helps in two ways. The first way is that it is involved with the gelling process. The second way is that it acts as a preservative. But yes, when fruits are very sweet you can make them without sugar. Love, Mary

Thanks for your very clear instructions. I am not even a beginner yet, but I just moved to 8500 altitude in the Rockies in a town of 400 from a rather large metro area. Hi Terry, since you are at a higher altitude, be sure to check the chart over at the national center for home food preservation‘s site to see how long you need to water bath can this jam. As to using any fruit, generally, many fruits can be water bath canned. But again to be on the safe side, I would check with the site I mentioned above to make sure the food that you want to can is something that can be water bath canned. Keep me posted on how everything goes. It sounds very exciting to have moved to a small town and begin this wonderful adventure you’re on. Love, Mary ❤️🤗❤️

Thank you Mary. A very helpful video. It was great to see this done without the sugar, with the explanations as to the water or fruit juice options. Also for alternative sweetners, I suppose stevia or monk fruit sweetner would be okay too? What about a little honey? Should one stay with strawberries for this particular recipe, or would other fruits work as well? Lastly, I was always a bit concerned on the removing air bubbles, in that I am concerned I may miss some somehow, and it not be safe. Quite a few questions, but thank you again for the video and your thoughts. Blessings.
