I like to go 325f for hot and fast. The home made rub I use Kosher salt, fresh ground pepper, granulated onion, granulated, garlic, brown sugar, paprika, and cayenne pepper. I like to use apple wood and hickory mixed for pork.

Looks great. I’ve done them fast and they come out pretty good, but the fat doesn’t render quite the same. Still, you’re saving hours on the cook…and get to sleep the night before.

Sometimes we need to do hot and fast. That turned out pretty good. Edit: I often keep smoked lard handy, hot and fast pulled pork can benefit with the added smoke from the smoked lard, if so desired.

Thanks, yeah that was my first one from them and it looked pretty good. Low and slow is still king, but this isn’t too bad. 🍻

For the 1st 4 minutes I was laughing about the ice you had in your Rum and Coke when it's 32F outside, but I didn't know it was Rum and Coke ... but as soon as you said it as you took a sip, I hollered 😂🤘
