Hello, in Khmer it's called : - « នំគាវប៉ាវកំពត Nom Kiev Bao Kampot » or « គាវកំពត Kiev Kampot » ; While in Hokkien-Minnan it's called : - « 貢布餃子 Gòng Bù Jiǎozi » (write in Traditional Han Chinese script) or « 贡布饺子 Gòng Bù Jiǎozi » (write in Simplified Han Chinese script). This is not Vietnamese dish, but 100% Han Chinese from Cambodia. It's sold in all Chinese-Cambodian restaurants in France and Kampot. In the traditional recipe, bamboo shoots are mostly used than jicama (but both are great), with the green onion-shallot-garlic & minced pork-shrimp-duck egg omelet stuffing. Your wife forget the key ingredient ➡️ ground « Kampot Pepper » and a bit of « Sesame Oil » in the stuffing. PS : Chicken Bouillon Powder is never used in a traditional Nom Kiev Bao Kampot. The creators of this « Kampot Dumpling », are descendants of Hokkien speakers (a dialect of the Minnan language - Teochew is also a dialect of Minnan) ; from the prefectural cities of « Xiamen » & « Quanzhou », in the Fujian province of China. The difference between Teochew and Hokkien is like the difference between Khmer Loeu and Khmer Krom dialect. They can understand each other. Hokkien people arrived in Cambodia during the Opium Wars, and lived mainly in Phnom Penh and Kampot. You and your wife can visit her ancestors in « Xiamen » & « Quanzhou » (you can watch this 2 cities on KZbin) one day, you will see the similarities with her childhood dishes.
