Will I need two packets for a 5 gallon batch O.G. 1.050 or one Lallemand pitch rate calculator says 20 grams or two packets. Is this correct? Thanks keep up the great videos!

I have a 5 pound bag of fructose sugar. Will this yeast use this as a simple sugar to create the sourness I'm looking for?

A little more info of using the CBC-1 would be a good idea. I have yet to use CBC-1 but want to try the Philly yeast and not sure of the process or amounts.. Thanks.

I pitched a packet of BRY-97 for bottle conditioning, and I think it worked well, FWIW. I think you just want something fairly neutral that will outcompete the Philly Sour so that it doesn’t sour further in bottle.

Sitting here enjoying my first Philly Sour, a dill pickle gose recipe I tried. Don’t have my notes in front of me, but I think the final batch was about pH 3.4, then added some distilled white vinegar for a more “pickle” flavor and dropped the pH to 3.1, if memory serves. Rather than CBC-1, I bottle conditioned with BRY-97 and it seemed to work well with the style. Definitely interested in playing around with Philly Sour some more!

can someone that is only brewing at a 1-2 gallon batch size scale this recipe pretty easily?

In general terms, any recipe can be scaled down and this one is no different. You can use brewing software to do the work for you or just reduce ingredients by scale to fit your desired batch size. You likely won't need to pitch the entire packet of Philly Sour yeast if you do end up aiming for 1-2 gallons.

I don’t think you’d have a problem. I generally brew in the 2.5-gal range b/c I like to push the envelope and try weird flavor combinations. My first try with Philly Sour, I pitched a full packet to a 2.5gal batch, and it performed like described in this video. Think mine came out to 3.4 pH. Hope that helps.

I brewed this a while ago with galaxy hops and passionfruit puree. One of my best beers yet.
