Ingredients:
√ Butter -2.5kg
√ Sugar - 2.5kg
√ Flour - 4kg
√ Baking powder -80ml
√ Egg - 2 1/2 crate
√ Mixed fruit - 2 packs
√ Flavor 2 capful of the following; brandy, coconut, lemon, strawberry and almond
√ Spices; cinnamon and mixed spice 5ml each
√ Browning - 1bottle
√ Half bottle of rum
Method:
√ Cream butter and sugar till soft and fluffy. It should double in size
√ Break and whisk egg
√ Sift flour and baking powder together
√ Add the flavor, spice, browning, and sun dried mixed fruit to the butter and sugar mixture
√ Beat them together
√ Alternatively fold in the flour and eggs
√ Pour into a well-greased and floured pan and bake till cake gives off a sweet smell and an inserted skewer comes out clean.
Ideal- Cake Pointer
√ A little extra rum should be added to the cake when it has cooled down
√ The sun dried mixed fruit should be soaked with half a bottle of rum a month before use.
Fondant icing
Ingredients:
√ 3kg icing sugar
√ 18 tablespoon water
√ 6 tablespoon gelatin
√ 450g glucose
√ 2.5ml cmc
√ Corn-flour
Method:
√ Measure water into a large cup
√ Beat in the gelatin
√ Add the glucose and stream till it is melted
√ Sift icing sugar in a bowl
√ Make a well in the middle of the icing
√ Pour In the melted ingredient and mix together. Mix till it forms a paste and then knead
√ Dust corn-flour on a table and work the icing till you have a soft but firm consistency
√ Roll out to cover your cake.
