When forming the ethylnitrile (at 6 mins), why does the N become positive? I don't understand the explanation of just saying it makes more bonds.

Why a polar protic solvent is used? Wouldn’t a polar aprotic be used.?

Is this a SN1 or SN2

Yes the mechanism shown is Sn2, if it were Sn1 then the Br group would leave in the first step to generate a carbocation which would then be attacked by the nucleophile.
