Nut and Dulce de Leche Alfajores

Ingredients
140 grams of flour 0000
70 grams of corn starch
150 g peeled and chopped walnuts
1 tbsp bitter cocoa
180 grams of sugar
180 grams of butter
500 grams dulce de leche
Semi-sweet chocolate to decorate
Instructions
1. In a bowl sift the Flour, the Cornstarch and the bitter cocoa. Add the sugar, the well-ground nuts and mix.
2. Add the butter cut into cubes and with your fingers form a sandblast.
3. Wrap in plastic wrap and refrigerate for 1 hour or until completely cool.
4. Roll out the dough between baking paper and cut the tops of the alfajores with a circular cutter of the size you want.
5. Place the caps on a baking sheet lined with parchment or buttered and floured.
6. Freeze for 10/15 minutes and then bake at 180 C (preheated oven) for 12/15 minutes or until golden brown.
7. Let cool on a rack and then fill with confectioner's dulce de leche.
8. Decorate with semisweet chocolate on top.
