A mexican inspired masterpiece of a breakfast.
Ingredients:
2 whole eggs, 1 egg white
30g mozzarella cheese
1 ripe avocado
Juice of 1 lime
6 cherry tomatoes (sliced)
1-2 scallion stems (diced)
1 wholegrain wrap
1 tsp olive oil
Directions:
Crack and whisk the eggs
Meanwhile heat the olive oil over a medium head on good non-stick pan
Add the eggs to the pan and cook for 1-2 minutes before adding the tomatoes and scallions
Scatter your cheese over the top of the omelette and let it melt
Throw your wrap on top of the omelette and flip everything like a pancake
For the filling mash your avocado with the lime juice and a pinch of salt
Add the avocado to one half of the quesadilla on the pan and flip it over on top of itself
Serves 1-2
