You can't beat relish in your sambo!
Ingredients
- 2 sweet red peppers
- 2 red onions
- 3-4 cloves garlic
- 1 red chilli (optional)
- 2 tbsp honey
- 2-3 tbsp balsamic vinegar
- 1 tin chopped tomatoes
- 1 tbsp olive oil
Directions
- Finely chop all the vegetables.
- Heat the olive oil on the on, add the veg until the onions have caramelised/gone golden brown.
- Add the tin of chopped tomatoes, honey, vinegar and bring to a simmer.
- Leave the pan on a gentle simmer for ~30-40 mins until the mixture has reduced down into a thicker, chunky relish
- Serves 8
