A great lunchbox or pre-training snack made with all whole food ingredients, including our very own honey from the urban farm here in Belvedere College S.J.
Ingredients
- 100g oats
- 200g peanut butter
- 60g pumpkin seeds
- 60g chia seeds
- 2 tbsp honey
- 80g dried cranberries, coarsely chopped
- 60g raw cashew nuts, coarsely chopped
- 1 ripe banana, mashed
- 50ml milk of your choice
- Coconut flakes for topping
Directions
- Lightly toast the oats over a low to medium heat on the pan for 5 to 10 minutes
- In a large mixing bowl mash up the banana
- Add all the remaining ingredients into the mixing bowl and bind well together
- Line a baking tray with tinfoil and add the mixture from the bowl
- Firmly prese down the mixture until it is evenly spread out and top with the coconut flakes
- Leave to set in the freezer for 2 hours
